3. Squid (recipes from Beijing).

Ingredients: three hundred grams of squid, half a liter of vegetable oil, ten grams of ginger, a garlic head, one onion, one spoonful of salt, starch and cognac, fifty grams of broth and twenty grams of fresh cucumbers.

Purified squids are cut into two strips, in which a few centimeters are made deep cuts. After that, make another incision in such a way that the pieces of rectangular shape have turned out, which must be dipped into boiling salted water and taken out when they are wrapped and fried in oil.

Meanwhile, in the hot oil add seasoning, prepared from finely chopped onions, garlic, ginger, cognac, broth, sliced cucumber, starch and salt, bring everything to a boil, put down squid slices and immediately take them out.

2. Gulf squid (recipes of festive dishes).

Ingredients: one glass of squid, cut into strips, two glasses of jelly, carrots, ten olives, half a lemon, ten branches of greenery.

In prepared forms, you need to put a little jelly, sliced olives, one slice of lemon, a few branches of greens. On top of all this, squids are put together, connected with carrot slices, all this is filled with jelly and put in a cool place for hardening. Before serving, the molds are lowered into hot water and immediately turned over, in order to put the product on the dish.
