Pancakes with filling

In modern cooking, pancakes with filling are conventionally divided into two groups: sweet desserts and snacks. At the same time snacks from pancakes (hot and cold) are an independent dish and are usually served to any table. They can be dressed with vegetables, herbs or baked with cheese and served with sauce. In any case, absolutely any food can serve as a filling, for example, slices of fish, minced meat, cottage cheese, various vegetables or pieces of fruit.

However, before stuffing pancakes, they need to bake. The dough for this dish can be any - yeast, and without the use of yeast, for example, cooked on milk. But we should remember one rule: pancakes with filling will be juicy and tender only when they are baked only on one side, and the filling is laid on the uninfected side. In this case, you can wrap them in various ways: a bag, envelope or in the form of cabbage rolls.

Consider several recipes for making pancakes with different fillings, which are used most often.

1. Pancakes with banana filling.

Ingredients: The test requires two eggs, one hundred grams of flour, one hundred thirty grams of milk, salt, coconut chips, forty grams of butter. For the filling, you need two bananas, one spoon of peanuts, pre-fried.

Protein is separated from the yolks and whipped thoroughly. Yolks are mixed with milk, salt and flour, add protein and coconut chips. Pancakes are baked on a hot frying pan in butter.

Next, they clean bananas, cut them horizontally and fry in chips from both sides in butter. Then half the banana wrapped in pancakes and sprinkled with peanuts. The finished product is placed on a serving dish, sprinkled with sour cream and served as a dessert.

2. Pancakes stuffed with meat.

Ingredients: ready pancakes (can be prepared according to the first recipe), half a kilogram of minced meat, two eggs, two onions, salt and spices, fifty grams of butter, vegetable oil for frying.

Egg must be boiled and cut into slices. Minced well fry and passed through a meat grinder. Finely chop the onion, fry it, add mince, spices, egg and fry for a few minutes. Filling is cooled, add a fresh egg, mix well and spread on a pancake and wrap. Prepared in this way, pancakes are spread on a baking sheet, sprinkled with cheese and baked in a well-heated oven. Ready meals can be consumed hot.

3. Pancakes stuffed with caviar.

Ingredients: ready pancakes (recipe number 1), two hundred grams of red caviar, fifty grams of butter, one spoon of mayonnaise, one cherry tomato for each pancake, three feathers of green onions.

Each pancake must be reduced in diameter. To do this, it is neatly trimmed to leave a long pancake ribbon a half centimeter in width and a smaller diameter pancake circle.

The middle of pancakes greased with mayonnaise and spread the eggs, which are sprinkled with chopped green onions. Cherry is cut into eight pieces and placed on top of the eggs. Then the edges of the pancakes are lifted up (making a bag) and tied with pancake bands.

Thus, pancakes are laid out on a dish, sprinkled with chopped herbs and served.

You can also lay the fish eggs on a pancake top, folded four times, decorating with a sprig of parsley or dill and a curl of butter butter.
