Pancakes are a very ancient dish. Probably, therefore, the dough for pancakes differs by an unlimited number of recipes. It can be placed on water, milk or fruit broths, use for it kefir, yeast or beer. Pancakes can be sweet or salty. In short, a very convenient dish, not limited to strict recipes.

Of course, the most popular are pancakes made from milk. Milk can be taken both fresh and sour. It will take a full glass. Still need 4 eggs, about 6 spoons of flour, a bag of vanilla sugar and plain sugar to taste. Mix all together in a mixer, add baking powder (or soda with vinegar), whisk again. The dough is ready. Bake pancakes in a hot frying pan. They turn out to be airy and very lush.

In general, pancakes with milk can be cooked in different ways. More dense in consistency are prepared in the same way as in the first recipe, but other product ratios are taken. It will take a glass of flour and warm milk, 50 g of vegetable oil, 1 egg, baking powder. First, milk is beaten with egg and salt, flour is gradually introduced, lastly, vegetable oil and baking powder are added to the dough. If the dough is very thick, it can be diluted with warm milk or soda water. This dough should stand for a quarter of an hour in the warmth. Fry pancakes in milk, using a light fire. The dough is heavy, at a high temperature it can burn outside, but inside remain moist. Since there is no sugar in the recipe, it is best to serve such a dish with something sweet: honey, jam, yoghurt.

Pancakes on milk can be made fruit or vegetable. Especially they are good in the summer, when there is no shortage of fresh vegetables and fruits. The most beautiful are, perhaps, carrot pancakes in milk. We cook them that way. Raw carrots (about a kilogram) blend. Some, however, make mashed potatoes of stewed carrots. But this is a matter of taste. In the puree pour half a glass of warm milk, put a packet of yeast, one and a half glasses of flour, 50 g of vegetable oil, sugar to taste, salt. Leave for half an hour to make the dough come up. We introduce into it two well-beaten eggs. Bake such pancakes over medium heat, and served with sour cream. They are very bright, juicy, useful.

For the same recipe, you can make pancakes with apples, pears, zucchini.

The original taste is vegetable or usual pancakes made on a mixture of milk and tomato juice. For their preparation, any of the above recipes will do. Only milk you need to take half a portion, and as much - tomato juice. In addition to pleasant taste, such products will please bright color.

What to do if you really want pancakes, and there is no milk or eggs in the house? Prepare pancakes on the water. Such a product is very tasty, but it can not be stored for long: the taste will disappear. Therefore we prepare at once. We take a full glass of warm water. If there is carbonated - excellent. The dough will turn out very lush. We raise sugar in it, a pack of dry yeast, a spoonful of flour. We give a quarter of an hour to stand. Add the rest of the flour (there should be about one and a half cups approximately), stir, then let us stand for a quarter of an hour. The dough turns liquid, bubbly. We spread it in a frying pan with a spoon, and salt the pancakes right on it. To make them especially lush, you can cover the frying pan with a lid.

Such fritters can be eaten even in Lent, because there is not a single "fast" product.

Pancakes can even be meat. Do not believe me? Try to mix a kilo of ground chicken with egg and spices, add three tablespoons of flour or starch, three tablespoons of sour cream or mayonnaise, spices.
