Have you ever asked yourself the question: "What is the secret of Caucasian longevity?" Of course, there are a lot of factors that influence this phenomenon. This is pure mountain air, and spring water, and organic food, and much more. However, one of the most important reasons is that in the Caucasus it is customary to consume a large amount of greenery and herbs. Cakes with greens, the recipe of which we will present to your attention, is the crown dish of the Karabakh Armenians. Several dozens of herbs are used for their preparation. We will not list the names of all the greens, since many of them are completely unknown to Russians. All these herbs are collected on mountain slopes, sometimes impassable and requiring the skill of a climber, then thoroughly washed, dried and placed in specially made for grass canvas bags. In this form, the herbs are stored for a long time. Stocks are made so that the housewives have the opportunity to cook these delicious flat cakes all year round. From the end of spring until late autumn, chefs have the opportunity to cook Armenian tortillas with herbs from fresh herbs. The recipe for these culinary products is very simple and does not require much time. Our recipe is slightly different from the original and more adapted to the Russian vegetable market. However, this cake does not become less appetizing and aromatic. By the way, the recipe for scones with greens should be of interest first of all to those who care about their figure and fight against excess calories. Also these flat cakes are an excellent meal during fasting: tasty, nutritious and low-calorie.

Cakes with greens. Recipe and step-by-step instruction

Necessary ingredients

For the test:

  • Flour - 1 kg;
  • Salt -1 dessert spoon ;
  • Warm water - 2-2.5 cups.

For filling:

  • 1 bunch of spinach;
  • A small bundle of beet leaves;
  • 1 bunch of parsley;
  • 1 bunch of dill;
  • 1 bunch of cilantro;
  • 1 small bundle of sorrel;
  • 10 onion feathers (one medium-sized onion can be used);
  • Vegetable oil - 4-5 tablespoons;
  • ground black pepper;
  • salt;
  • Red ground pepper.

Cooking dough

Pour flour into a pea, salt dissolve in water, pour water in one hand with a trickle, and another - with a wooden spoon - knead a homogeneous stiff dough. Cover with a towel and leave for an hour.

Cooking stuffing

Greens thoroughly clean and rinse, spread on towels to remove excess moisture. Take a deep bowl and there alternately add finely chopped greens of all varieties and onions. Pour in the vegetable oil and pour out the spices. All mix well. In a word, you get a very tasty green salad, which you can eat and raw.

We form tortillas with herbs (the recipe is designed for 15 - 20 servings)

The dough is divided into 15 to 20 equal lumps. Sprinkle the working surface with flour. With the help of a rolling pin, each lump is rolled into a flat cake the size of an ordinary plate. Put the filling in the center of the flat cake around the diameter of the slide. Pinch the ends of the dough like a Russian patty. Press the edge of the brush to make the patty flat. You can decorate the product in the form of chebureks, ie, fill the filling with one half of the cake, cover with the second part, and press down the edges, giving it the shape of a crescent.

We bake Armenian tortillas with greens

Cast iron frying pan thoroughly, lay out cakes on it, lower the heat and cover with a lid, after two minutes turn the product to the other side. As you understand, every cake is baked somewhere 3-4 minutes. In order to avoid the smell of burnt dough, you need to remove excess flour with a special brush or simply blow it off.
