Soup gazpacho: recipes and technology of cooking

Summer is a time when various vegetables ripen. Everyone knows that they are very useful, nutritious and rich in a whole complex of vitamins and minerals. This should be actively used to consume as much raw (not processed) vegetables as possible during this period. Moreover, it is recommended to eat them not only in salads, but also in the first dishes. You can make a very tasty and nutritious summer soup "Gaspacho". It is simply irreplaceable in extreme heat.

In addition to the undoubted benefits of this dish, it should be noted how easy and quick the cold soup "Gaspacho" is prepared. This does not require special knowledge and a rich culinary experience. It is enough to have a simple set of ingredients. Let's get going.

To begin with, let's define the fact that the traditional recipe did not intend to use a blender. This is used in the modern version. Therefore, you can use two Spanish cooking methods:

  • All vegetables are cut into pieces and passed through a very small grater;
  • Components cut very, very finely, and then whisk them for a long time with a fork.

The method of processing vegetables can be chosen any. The main thing is that the dish as a result becomes homogeneous in consistency.

Classic soup "Gaspacho"

It is necessary to cut three large cloves of garlic very finely and put in a mortar, mix it with half a spoonful of medium-sized salt and crush it thoroughly. Gradually start to report dried bread slices (just two pieces) in a small piece, and continue to mix it with garlic and 100 grams of olive oil. Should be a homogeneous mixture, but not thick, but similar to liquid kefir.

In the event that it is not possible to use the mortar, then the bread is soaked in a small amount of mineral water. Beat all together with a blender.

Bread can be replaced with breadcrumbs, which do not have any additional flavors.

To tomato soup "Gaspacho" became such, it is necessary to use only ripe, fleshy and juicy tomatoes. Six pieces lower in boiling water for about thirty seconds, then get a noisy and carefully peel off. In order to do this, it is recommended to make an incision near the stem, remove it and begin to clean it from the top. Next, cut the tomatoes into small slices and grind them separately in a blender.

Peel two medium cucumbers and cut into thick mugs. A large red bell pepper must be peeled and also chopped. Grind and pour into tomatoes.

Now you need to make a mash to make the soup "Gaspacho" become homogeneous. To do this, it is very good to beat a small onion, add to it a bread-and-garlic mixture and all the vegetables. Stir is recommended for a long time and leave for half an hour, so that the first dish is insisted.

But you need to keep in mind that acrid onion does not suit such a soup. Only sweet and juicy fruits are needed. Therefore, if there is only bitter, then the onion cut into slices and pour a small amount of 9% vinegar for ten minutes. It is necessary that the soup "Gaspacho" turned out very delicate to taste.

Next, try the resulting dish, salt to the desired state and add a little vinegar. But it is recommended to use only apple or wine. If they are not, then pour in the juice of one lemon.

Now add the mineral water to the consistency that is necessary. And, from the first dish you can make and drink, pour more liquid. Then we send it to the refrigerator for one hour. That's all: cold soup "Gaspacho" is ready.

Serve it in deep plates, decorate with a sprig of parsley and put directly into the first dish or next slices of white bread. It turns out very tasty and useful.
