Pide: recipe from sunny Turkey

In the world there are such dishes, passing by which is practically not possible. Here, for example, have you already tasted Turkish pida? If not, then absolutely in vain. You can say that you missed a lot. Turkish open pies are a great national dish, which is very popular among the "indigenous" population, and very fond of tourists who come to this country. Pide can be found in almost any city in Turkey, but especially well this food goes to all sorts of resorts.

Pide is an analogue of pizza, flat cakes made from yeast dough, in forms resembling long boats, and inside - a delicious filling, which can also vary. The juiciness and satiety of this dish directly depends on the different contents of the fillings. They are traditionally prepared from minced meat with some vegetables, chopped chicken meat, beef, lamb, there are options and with cheese + spinach, there are simply, for example, with two or three kinds of cheeses. In fact, there are many kinds of pida. The recipe is quite simple. Many people even call it Turkish fast food. But the real pida in Turkey is cooked in a firewood oven, and it's better to try it hot so that it does not cool down.

Description of the dish

National pride, Turkish pide, whose recipe will be given just below, is a kind of middle between open pie and pizza. The form, as already mentioned, resembles a boat. It floats with minced meat inside, extremely juicy because of the richness of its vegetables: onions, parsley, tomatoes, greens. And the cheese gives it a piquant taste and a pleasant smell. By the way, in Turkey there are several varieties of hearty flat cakes: lakhmajun, gazleme, pide. The last variant differs in width of a sheet of the test and the form of a batch (пиде - лодочка). Prepare it almost instantly, and taste something, taste: extremely impressive and forces you to eat another portion, even a whole boat! Pide is quite possible to cook with cheese + beef, with vegetables and cheese, with beef and cheese, with sudzhuk and cheese, with chicken - as you already have to liking. It is also quite good to add the cut olives to the filling, if there is a desire - lemon. Such a dish is like a wand-rescue stick when the guests are on the threshold: they made a couple of boats, cut the salad, put wine (preferably white) on the table, and there's nothing else to worry about. The production of a Turkish pie includes a kneading test, which must be done in advance. This step of the recipe should be given the most attention, since the yeast dough should ascend, and at the time of baking the dish should be fully operational. Ingredients (dough)

It is necessary to take a bag of baker's yeast (grams 25), 1.5 cups of flour, two small spoons of sugar, one - salt, a little more than a glass (how many dough will take) of warm water, several large spoons of olive oil.

Pike with meat will require 300 grams of minced meat: chicken, beef is mostly used. Also needed: the head of a beet, cow butter 50 grams, a couple of tomatoes, a few spoons of olive oil, Bulgarian pepper, 200 grams of hard cheese, half a glass of tomato paste, a lemon floor, spices to taste.

Ingredients (filling - cheese)

Pike with cheese will require almost the same ingredients for its filling, but instead of minced meat we will use cheese (preferably several varieties). You can take grams of 150 mozzarella and 150 grams of Swiss hard, for example. It is important that the weight of minced meat is replaced by the same amount of cheese. And vegetables can be left the same, or add, for example, olives, or - for an amateur - cut marinated capers with lemon wedges (the main thing - do not perekislit).

Preparation of the dough

  1. Stir yeast in a warm liquid, add salt, olive oil and sugar at this stage. All mix.
  2. Sift flour, mix it with the composition from the first point, knead the dough. Do not be scared if it turned out to be too sticky - that's fine.
  3. In heat, we remove the dough for half an hour (t-ra no higher than 40 degrees).

Preparation of the filling

  1. Finely chop the onion. Fry it until golden in a frying pan for a couple of minutes.
  2. Pour out the mince and introduce the spices a little later, before the readiness (after 10 minutes). Fry for about a quarter of an hour about.
  3. Vegetables rest cut into small cubes. Stirring.
  4. Fried minced meat mixed with greens.

Preparation of pida

Now it remains to warm up the oven (or stove) to cook the pide itself. Recipe in the future performance is very simple. From the dough form a fairly large boat and fill them with stuffing (do not forget to miss olive oil). In the beginning - minced meat, then - vegetables. Top - grated cheese.
