For the marinade, take 400 ml of water. It pours out sugar and salt. The solution is boiled for 10 minutes, after which 50 ml of 9% vinegar is added to it. Marinated patissons are especially tasty if they are cut not too large pieces. At the bottom of washed jars put carefully washed spices and herbs, and then tightly sliced chopped up to the very top. Prepared in this way cans are filled with marinade (80 ° C), cover them with lids and put into a large saucepan with warmed water (70-80 ° C). After it boils, the jars are sterilized for 15 minutes. The cans are rolled up and turned over for ready-made preservation. They put them in a cool place, because the long-cooling marinated patissons will become soft. For this recipe, you can use not only pieces of large patissons, but also small fruits that fit easily into the jar. The following recipe for making delicious snacks from small fruits or pieces of ripe vegetables allows you to quickly prepare a conservation that can be stored for a fairly long time. For its preparation, you need the following products: 1 kg of small patissons, black pepper and fragrant (2-4 pieces), 10 grams of black currant leaves, 10 grams of horseradish leaves, 10 grams of tarragon, 20 g of dill, 1 l of water, 20 grams Sugar, 50 g of salt, 150 ml of 9% vinegar.

The technology of preparation of conservation: patissons wash, clean them from the stalk, cut off the tops. Vegetables are placed in cans, on the bottom of which are pre-laid spices and spices. They can also shift some layers of patissons. Water is brought to a boil and filled with vegetables for 5-6 minutes, after which it is poured into a separate container and boiled again.
