Each mistress knows: how you will work in the summer - and you will eat in the winter. Many people in the summer-autumn period make blanks for the winter from mushrooms. As a rule, many can cook the compote or jam, but how many mushrooms are prepared for the winter, not everyone knows. Most often for these purposes, housewives use champignons. These mushrooms are sold in stores, and they do not need to be searched in the forest.

Which mushrooms are better?

Experts of mushrooms recommend buying fresh small mushrooms. When choosing, pay attention to their surface. It should be clean, white, without any signs of rotting.

Cooking mushrooms for the winter

So, after buying mushrooms, you can proceed to a procedure such as harvesting mushrooms. However, in the beginning, carefully remove the skin from the hats and cut off the rootlet. Next, the mushrooms are washed and spread in a saucepan. Then you need to add lemon juice to the champignon bowl at the rate of 1 lemon for 450 grams of mushrooms. You should also add a pinch of salt here. After that, the water is added so that it covers the contents with a margin of about 3-4 centimeters. Put the pan with champignons on the fire and bring to a boil. Cook for 5 minutes.

After this, the mushroom harvest continues. It is necessary to remove the pan from the fire, remove the champignons from it, allow them to cool and spread over the jars. Fungi should not occupy the entire volume, but only 70% of the capacity. They are poured over with broth, in which they were brewed. As a result, jars of champignons should be closed with capron cap, put in a pan of cold water, put on a stove. Bring to a boil and keep on the fire for about an hour. Then the banks are pulled out of the pan. After their cooling, the mushrooms are covered with metal lids. Champignons are stored in a dry place throughout the year. This procurement of mushrooms allows you to keep a fresh taste of mushrooms.

In addition to the above method, there are other ways of processing this product. First, it should be noted that the harvest should be carried out for each species of fungi separately.

Drying and salting

Housewives prepare mushrooms for the winter not only by pickling, but also by drying. This is the simplest method of preparing them. Before proceeding to this procedure, it should be noted that mushrooms are not washed, but are only cleared from the ground and various litter. Cut the legs 1,2-2 cm from the cap. Further, for 2-3 hours they must be dried at a temperature of 40-50 degrees. In summer, the best option is the sun. You can also dry mushrooms in the oven. To do this, you need to thread them on a thread, leaving a small distance between them. Dried mushrooms are great for cooking soup. Keep them only in a dark cool place where there is no damp.

Salting

Harvesting mushrooms can also be in their salting. To do this, you will need enamel or glassware. First, you should select, clean and rinse the mushrooms. Then they are soaked in cold water to get bitter (for a week every day to change the water). Then mushrooms are densely packed in pots or kegs, while pouring with salt (per kilogram of raw materials - 1.5 tablespoons). Add bay leaf and pepper to taste.
