Dough for the kurik. Recipe for puff pastry and short pastry

Kurnik in Russia was called a dome-shaped pie with a multilayer filling, the mandatory component of which was chicken meat. Such a pie was baked to various celebrations as the main decoration of the festive table.

In the classic cooking variant, the kurik is baked from a puff pastry. Of course, today such a dough can be bought in the store, but it is better to cook it yourself. To make a flaky dough for a kurik, the recipe of which is given below, you will have to be patient, since it is prepared long enough.

For the test, we need about three hundred grams of flour, one hundred and fifty grams of creamy margarine or butter, one hundred and fifty milliliters of water, a little salt and a few drops of vinegar or lemon juice.

From flour with the addition of water and salt we mix the dough, which should not turn out to be too steep. Margarine kneaded, mixed with a spoon of flour (cut with a knife, and not rubbed with his hands) and a few drops of vinegar. This oil mixture should be very cold, so after mixing it should be cleaned in the refrigerator for about twenty minutes.

The prepared dough is rolled out in the form of a flat cake, in the middle of which we lay out the oil mass taken from the refrigerator. Fold out the cake in the form of an envelope and roll it out. Again, folded four times and again rolled into a cake. We remove the folded four dough in the refrigerator for half an hour, and after repeating the operations described above with rolling out two more times, keeping the dough between them in the cold. Puff pastry for the kurik is ready, you can start cooking pie.

As you can see, making a real puff pastry takes time. But you can go the other way and make a "false" puff pastry for a kurik. The recipe for this test is much simpler.

We need two glasses of flour, about a hundred grams of sour cream, two hundred grams of butter, a quarter of a teaspoon of salt and one egg. The butter for making such a dough should be frozen, and all the other foods should be kept in the refrigerator for a bit, so that they are cold.

We rub the oil on a grater and mix it with flour to make a crumb. In this case, flour with oil is not recommended to be kneaded by hand, as the oil can melt and the effect of layering of the dough will not be achieved. A mixture of flour and oil is collected in a mound, at the top of which we make a "funnel". Pour into this cavity the egg whipped with salt and sour cream and quickly knead the dough. The finished dough is placed in the refrigerator for one hour, wrapping it beforehand in the film. As you can see, the "false" puff pastry for the kurik, the recipe of which is given above, is prepared much faster.

As already mentioned, the curcher is made with a multilayer filling, and the layers should be separated from each other with pancakes. Therefore, in addition to the main test, you should prepare a pancake batter for a kurik. The recipe for this test is simple.

For half a cup of milk you need to take one egg, fifty grams of flour and thirty grams of butter. Sugar and salt are added to the dough to taste.

From these ingredients, we knead a liquid pancake dough and bake a few thin pancakes.

Today, the curlin is sometimes baked not only from puff pastry , but also from short pastry. Therefore, you should learn how to cook a dough for a kurik. For this type of test, we need two hundred grams of sour cream and margarine, two yolks (we do not need proteins), about two glasses of flour, a bag of baking powder, half a spoonful of sugar and a little salt.

We rub the yolks with sugar and add salt, then in this mass we introduce soft, but not melted margarine, sour cream, and in the end we add flour mixed with a baking powder. We mix the batter into the refrigerator for twenty minutes.

We told how to make a dough for a kurik, and as a filling for this cake use different options. For example, as the first filling, which will be closer to the bottom of the pie, you can take boiled rice mixed with chopped eggs and butter. The second layer can be filled with chicken meat, and on top of it - filling from boiled mushrooms.

Is going to a kurik so. We divide the dough into two parts and roll out cakes half a centimeter thick. We put one cake in a greased round shape so that its edges hang from the sides. Then we put the first pancake on the dough. From the top we put rice stuffing and we cover it with the second pancake. Then we spread the remaining kinds of fillings, separating them from each other with pancakes. The top layer is also put pancake. Then cover all this "construction" with the second cake from the dough, we patch the edges, forming a pie. From above, you can decorate the kurik with figurines from the dough. Then grease the surface of the pie with a beaten egg, make a few punctures on the top to exit the steam and bake the kurik in the oven.
