Many do not represent their daily menu without a tasty and hearty soup. There is a large amount of vegetable and meat first courses, recipes which each owner has. The same applies to rassolnik, which is prepared in different ways. Some people prefer to add pearl barley, other rice porridge. At the same time, the main ingredient is salted cucumber or brine from them, due to what the soup got its name.

On how to boil rassolnik with rice, I would like to talk more. It should be noted that the recipe for its preparation is quite simple. To begin with it is necessary to prepare everything you need. As a basis for the broth, you can take meat (beef or pork), kidneys, chicken, even fish or mushrooms.

Before preparing rassolnik with rice and kidneys, you need to cook the latter. For this, they are cut along into two parts, films are removed from them, and the kidneys are soaked in cold water for about three hours. This is necessary in order to get rid of the characteristic smell of the future dish. Further, the kidneys are put on fire in a small amount of water, and after boiling they are removed and washed again once more. After that, they cook until ready, which will take about two hours.

Rice is preferably pre-soaked for several hours in water. At this time in a pan fry vegetables, diced carrots, celery root, onions. In the boiling broth, pickled cucumber slices are added and cooked for about 7 minutes. After that, here you put the peeled and cut potatoes, fried vegetables. After a few minutes, put rice, after which the soup remains on the fire for about 10 minutes and turns off, left for a while under the closed lid. Even if it seems that the croup is not yet completely ready, do not worry, rice will come in hot water. But if you leave it for some time on fire, there is a risk of getting overcooked porridge with vegetables instead of soup. The rassolnik is poured into plates, after which diced cubes are added here.

Delicious and fairly simple to prepare is rassolnik with chicken and rice. To begin with, the chicken carcass should be boiled until half cooked. The broth from it merges, is filtered and put on fire. Add fried onions and parsley root with celery. Meat is divided into small pieces and is again added to the vegetable broth. After a while, potatoes and a few spoons of rice cereal are placed in the soup. Brewed everything until the potatoes are ready, after which a salted cucumber, cut into small cubes, is added, and everything is removed from the fire.

Speaking about how to cook pickle with rice, it should be noted that you can add cucumber pickle here, which makes the soup more tart taste. To do this, the brine filters, boil for about 5 minutes and added to the broth before cooking.

Before cooking rassolnik with rice and mushrooms, you need to cook the mushroom broth, from which the mushrooms are removed and cut into small pieces. In the broth, roasted vegetables, cereals and sliced potatoes are added. A few minutes before the vegetables are ready, mushrooms and pickled cucumbers are put. You can also add a couple of spoons of tomato.

No less tasty is the soup prepared on fish broth. To do this, it is advisable to take any sea fish fillets, so that it has a minimum of bones. Carrots and onions are fried in a frying pan, added to the broth. The boiled fish is taken and cut into small pieces. In the soup is added rice and potatoes. It is better to add a pickled pickle from the cucumber. Before serving, fish are laid out in the plates, a pickle is poured and sprinkled with finely chopped dill.
