Pyshki on milk: cooking options. Dumpling recipe on brine

Pyshki is a dish familiar to every ordinary inhabitant since childhood. It's pretty straightforward baking from Russian folk cuisine. It is prepared by frying in a frying pan, it often contains different fillings. Dough for pyshek can be used both yeast and bezdozhzhevoe. Here are a few simple ways to prepare them.

Classic puffs on milk

This is, perhaps, the easiest way to cook pyshki. First you need to sift half a kilogram of wheat flour (fit first grade). Then, half the pack of dry yeast should be poured into it (if someone prefers to use pressed yeast, they need 16 grams), 5 grams of salt, 60 grams of sugar, one chicken egg, after which the dough is kneaded for 7 minutes with the addition of 1 , 5 cups of milk. After this time, add 60 grams of margarine, which can be replaced with 3 tablespoons of refined vegetable oil, and continue the process for another 10 minutes. Ready dough should be left for the approach for about a couple of hours (it should increase in volume by 2-3 times). After that, the dough should be kneaded and left again until the volume increases.

Once the dough is finally ready, you can start working with it. It is rolled out on a table, with the help of molds, figures are cut out. At this time, you can put a frying pan with vegetable oil. In order to get delicious and tender puffs on milk, a pan must have a lot of oil.

Ready figures are laid out in hot oil and fried from two sides until ready. At the end of frying, the puffs are soaked with a napkin to remove excess fat and sprinkle with powdered sugar.

Milk dips with cherry filling

For the preparation of this type of dumplings, the classic yeast dough, the technology of preparation of which is described above, is also used.

For the filling you can use both frozen and fresh berries. In order for them to let the juice, they need to add granulated sugar (at the rate of 0.5 kg of cherries - 300 grams of sugar). To ensure that the filling does not flow out during the formation of the dumplings, it must be thickened. To do this, you can use 40 grams of starch (but add it only after the final dissolution of sugar).

A saucepan with a cherry should be placed on the stove for medium heat and lightly cooked until it reaches the consistency of the jelly.

After cooling of the filling, one should start to form the dumplings. To do this, roll out small dough strips and stuff them, then fry on both sides in a large amount of hot vegetable oil.

Thus, very tasty puffs are obtained on milk, fried with cherry filling.


English cucumbers

To prepare this original type of puff, it is necessary to dissolve a couple of tablespoons of yeast in 3/4 cups (150 ml) of warm milk, then add one egg and 60 grams of melted butter. It also adds 1.5 tsp. Salt, 40 grams of sugar with five incomplete glasses of wheat flour. Of all the ingredients, you need to knead an elastic dough that will not stick to the edges of the dishes. You need to leave it until the moment it increases by 2 times.

From the finished dough you need to form round layers and lay them on a pan, sprinkled with semolina, and wait until it rises. After that, the fire turns on, and the buns are baked.

The English cooking variant differs from the classical one in that it results in puffs on milk, fried in a frying pan without oil.

Pyshki on brine

You tried everything on milk, but if you cook them on a brine, it will be very unusual.

For them you will need half a glass of any brine, half a teaspoon of salt, half a cup of sugar, 1 spoon of refined sunflower oil and one egg are added to it. These ingredients should be mixed thoroughly. Separately mixed 1.5 cups of sifted flour with 1 tbsp. L. Baking powder. After that all the ingredients are combined and the dough is kneaded from them. After that, it should be left for the approach for 10-15 minutes.

Ready dough rolled into thin rectangular strata, which you need to sprinkle with poppy seeds. Further, the strata are cut into strips, which are individually twisted into spirals. Then they need to be laid on a sheet, pre-laid with oiled parchment, and bake in a hot oven until a crust forms (about 25 minutes) at a temperature of 170 degrees.

As you can see, the dumplings on the brine are not cooked the same way as the puffs on milk, but they are no less delicious. Such an original recipe is definitely worth a try.
