You can pickle the beet in various ways. But spicy beet is especially delicious. For cooking, you will need:

  • Beet - 10 kg,
  • Water - 10 liters,
  • Apple vinegar (wine) - 1,5 l,
  • Salt - 200 g,
  • Sugar - 200 grams,
  • Mustard grains - 60 g,
  • Dill - 20 g,
  • Horseradish root - 2-3 pcs.,
  • Basil, laurel, currant leaves, hot pepper.

Preparation

Wash beets and boil until cooked. The vegetable should become soft. Cool and clean the beet from the skin. Cut into pieces of any shape. Now prepare the pickle. Mix water with vinegar, dill, mustard seeds, sugar, horseradish root, basil, salt. We begin to pickle the beets. Horseradish part of the horseradish and put on the bottom of cans for canning. There also put a couple of laurel, currant leaves and a small piece of red hot pepper. Put beets in cans, pour over prepared marinade. Sterilize the container for 10 minutes. Close the covers and turn them upside down.

Beetroot with onions

  • Beetroot - 450 g,
  • Wine vinegar - 175 ml,
  • Peppercorn and salt,
  • Onions - 2 pcs.

Wash beets. Cut off the ends of each root crop. Wrap in foil. Bake the vegetable in the oven for at least 3 hours. The temperature is 190 degrees. Willingness of the vegetable can be checked with a knife or toothpicks - if the beet is easily pierced, then it is well baked. Now remove it from the oven, cool and peel. Before you start pickling the beet, thinly slice it. Peel and finely chop the shallots. Banks sterilize. Put them in beets with onions. Prepare the marinade. To do this, in a saucepan, boil the vinegar with salt and pepper. Fill them with vegetables. They must be completely brine covered. Cover the jar with the lid. This beet can be eaten in a few days - it does not require insisting. If the vegetable is constantly covered with vinegar marinade, then it can be stored for a very long time.

Beetroot with black currant

Marinate beets can and with black currants. This recipe includes the following components:

  • Beet - 600 g,
  • Black currant - 150 g,
  • Vinegar - 40 ml,
  • Sugar - 30 grams,
  • Salt - 15 g.

As in previous recipes, beets need to be washed. Then peel it from the skin, cut into cubes. Smooth currant berries and go. Banks sterilize. In them place the prepared foods in the following proportion: beet - 4 parts, currant - 1 part. Marinade is done this way: vinegar, salt, spices (cloves or any other), the sugar is mixed and brought to a boil. Pour the beet into the prepared brine. Cover the boil, cover with jars and sterilize for about 5-10 minutes. Roll the jars and cool down. Now you know how to pickle the beets correctly. Any recipe can be added with your favorite spices.
