As the heroine of one movie said: "fried potatoes, cooked, stewed, French fries and so on ad infinitum." This unique root is good in any form, and the dishes from it simply can not be considered. Bitato potato, this is another unique dish from the category of "always at hand."

It is difficult to imagine now your diet without this indispensable root. Potato in its composition contains a large amount of carbohydrates, due to which it is quite nutritious, but even more useful is the content of potassium. It is this macronutrient that has a positive effect on the heart muscle, controlling the water and salt content in the body and removing its increased excitability. Dishes from potatoes are so varied that in one form or another they are served both as basic, as a second course, and as a sweet.

Bitato potato is a culinary emigrant, it's a French dish, and the history of bringing potatoes to Russia by Peter the Great from Holland also can not be forgotten. And it seemed that we always had this root crop and it is impossible to imagine that in Russia it has been cultivated for only a few centuries. Earlier it was such an outlandish dish that served only to honorable guests, more often as a treat, and not with salt, but with sugar. Now it is served in such a way that you can not immediately guess what is behind this bizarre shape: it's shavings, ringlets, roses and potato beads.

But in the beginning they were cutlets from beaten meat, over time they evolved from meat to vegetables, and from the dish only form remained, and not content. The beads externally resemble tightly shaped round cutlets of arbitrary size. This dish is easy to prepare, it can be confidently asserted that all products are always available, and it is always pleasant to diversify the table with an unusual design.

There is an opportunity to save yesterday's mashed potatoes, but there is an occasion to cook fresh potato sticks. For this, root crops with a good gluten content are best suited, which will give them a more stable form. Wash potatoes, peel and rinse, cut halfway. Put a pan of water on the fire and allow it to boil. Remember that all vegetables, without exception, it is better to add to boiling water to maximize their vitamin value. Salt from the calculation of ½ teaspoon of salt for 3 liters of water. Cook potatoes for 30-35 minutes, depending on the variety.

Potato beans, the recipe we took as a basis, suggest the presence of the following ingredients: 1-1.2 kg potatoes, 4 eggs, breadcrumbs or semolina - 200 grams, 150 grams of cottage cheese or low-fat cheese, pepper, garlic. Drain the water from the potatoes, mash with a potato until it's homogeneous, let it cool, so that when the ingredients are mixed, eggs are not brewed. 2 eggs beat in a foam mixer, add cottage cheese, pepper and chopped garlic (one head), pour the mass into mashed potatoes and mix with a mixer with a special nozzle. Allow time to thicken the mass (5-7 minutes).

Then beat the remaining 2 eggs into a foam. Spoon a bit of potato from an arbitrary size, giving them a slightly flattened shape for better contact with the frying surface. Dipped them in beaten eggs and crumble in breadcrumbs (you can mix them with an equal number of semolina). On the fire, heat the frying pan with thick walls, pour in the vegetable oil and over a large fire fry the potato bits to a crispy golden crust for 2 minutes on each side. We spread our dish depending on how we serve it. If this is the main dish, then put it on a flat tray, pour sauce or sour cream and decorate with finely chopped greens of dill and parsley. If the potato bits are used as a side dish, then they can be served immediately on a portion plate in combination with the main dish, but the greens do not hurt either.
