"Moscow" salad: the recipe. How to prepare "Moscow" salad ("Olivier")?

If you need to prepare a tasty and satisfying cold snack for a usual dinner or on a banquet table, many people come to the mind of the "Moscow" salad. The recipe is in the arsenal of most experienced housewives. It is prepared in cafes and restaurants, but only the composition and method of filing can be quite different.

But there are things that unite absolutely all the variants without exception: the recipe of the Moscow salad always allows you to create a tasty and satisfying dish (which is quite caloric), which can not only satisfy the guests' hunger, but also decorate the table.

Ingredients

As a rule, it is prepared from meat, eggs and boiled vegetables. Depending on the culinary preferences, the recipe for a "Moscow" salad may be with chicken or beef, pork or ham. As additional components use carrots, potatoes, eggs, greens, apples, green peas.

It turns out that a lot of different dishes have the same name "Moscow" salad. "Olivier", as it is traditionally prepared for the New Year, is also on this list. In America it is called "Russian" salad, and in Europe - "Moscow". If we consider the latter from the classical point of view, the only difference is that instead of the usual sausage, boiled meat is added there.

Moscow Classic salad

As already mentioned earlier, the dish is not much different from all the usual "Olivier". 200 grams of lean pork take 3 medium potatoes, 2 small fresh cucumbers, carrots, a large unsweetened apple and 2 chicken eggs. Still need a small bunch of green onions, dill, parsley, half a glass of sour cream, a little salt and sugar (to taste). For decoration use the leaves of a green salad.

Before you prepare a "Moscow" salad, you need to boil the ingredients (separately eggs, meat and vegetables). They are then cooled to room temperature and ground. Carrots, potatoes, eggs and pork are cut into cubes. Peeled apple tinder on a large grater. Cucumber chopped straw, and washed greens finely chopped.

Next, mix all the ingredients, add salt, add sugar and season with sour cream. Serve on a common dish, laying on lettuce leaves.

Original recipe with fried meat

Despite the fact that this dish differs significantly from the previous one both in composition and in principle, it is also called "Moscow" salad. The recipe is a bit more complicated, the ingredients are bigger. But the result is more interesting and useful (due to the lack of mayonnaise in the composition).

For 250 grams of pork take half a glass of chopped walnuts, a couple of apples, 2 boiled eggs, large beets, a little greens of dill and a celery root. Refueling is made from vegetable oil (4 tablespoons), apple cider vinegar (2 tablespoons), mustard, salt and sugar (to taste).

Beetroot must be baked in the oven, wrapped in foil, and then cooled, cleaned and cut into strips. Pork is chopped in thin strips and fried, slightly salted. Apple and celery root are peeled and grated (or cut). Then all the ingredients should be mixed, put on a large dish, pour with dressing, sprinkle with chopped dill and nuts. You can arrange the salad portionwise for small plates, decorating it with herbs.

With chicken breast

Another "Moscow" salad, a recipe with a photo of which is presented below, is also called "Stolichny". For cooking, you need the following products: a small chicken breast (cooked with salt and bay leaf), 4 boiled eggs and small potatoes, a large carrot, 2 pickles, a green pea can, a bunch of onions, dill. For dressing use mayonnaise, and for decoration - lettuce leaves.

All ingredients (except cucumbers and greens) should be pre-welded and cooled. After that, vegetables and eggs are cleaned, all are cut with the same cubes and mixed. Mayonnaise the dish is filled directly before serving, spread in a deep salad bowl and decorate with chopped greens.

Salad "Olivier"

Since in the whole world it is identified with the concept of "Russian" or "Moscow" salad, this recipe should also be mentioned. Moreover, many housewives alternate sausage and meat, depending on the availability of certain ingredients. As a rule, all components are taken in equal amounts (by weight). These are pickled cucumbers, boiled sausages, potatoes, carrots and chicken eggs. You will also need peas, greens for decoration and mayonnaise. Sometimes for a fragrance in "Olivier" add a fresh cucumber, and for piquancy - an apple.

Pre-boiled eggs, carrots and potatoes are peeled, cut into cubes. Sausage and cucumber - too. Then, stir everything, add chopped greens, peas and fill with mayonnaise.

A bit of history

In general, the fate of "Olivier" is very curious. Its original composition contained grouse meat, black caviar and other delicacies. Served this dish in a French restaurant in Moscow. His owner was Lucien Olivier (in honor of his dish and was named). With the advent of Soviet power, these products were replaced by more accessible "analogs," which also "evolved" over time. As a result, a modern version appeared. By the way, the second name of the dish was received thanks to the chef of the restaurant "Moscow" Ivan Ivanov, who also remembered the salad, changing the ingredients to more affordable. Subsequently, it began to be prepared everywhere, calling both "Russian" and "Stolichniy", changing the composition in its own way.

Food and energy value

Regardless of the cooking method chosen, the dish is very caloric. Therefore, neither during fasting, nor on a diet, it is not used. Especially nutritious will be the classic "Moscow" salad, the recipe of which is written above. After all, it contains sour cream, fatty meat (pork), and chicken eggs. In 100 grams of this dish contains about 250 kcal. If pork is replaced with chicken, and mayonnaise is used as a dressing with a low fat content, the salad will still not be dietary, although progress will still be felt. In 100 grams of such food about 200 kcal. Neither celery with apple, nor refueling with oil (even the original variant with fried pork will pass for 200 kcal in 100 grams) will help, although the benefits of using them, of course, will be. But in the usual "Olivier" with boiled sausage there are only 167 of them (true, without mayonnaise).

Options for filing and registration

Preparing any festive dish is only half the battle. The design and serving play no less important role than the composition of the dish and the quality of the products. After all, guests first look at the table, and then they start tasting. Is not an exception and the "Moscow" salad. The recipe does not play a big role here, it's possible to decorate any of the options beautifully.

Those who are not strong and inexperienced in this matter are not advised to immediately try to create a masterpiece. Very worthy of looking salad, laid out on a large dish and decorated with greens. It can be simply chopped and sprinkled on top or spread with bows, dill, parsley, lettuce leaves, a bouquet, an inscription or other composition.

If the composition of the dish includes nuts, they can also be used for sprinkling. Well, in the presence of time, patience and experience, in time to create vegetable masterpieces. From the boiled carrots, fresh cucumbers, greens, onions, beets cut roses and daisies, whole bouquets and lawns. And for a children's holiday usually create funny little animals.
