Korean Kuksi. Recipe

In Uzbekistan, this cold soup is cooked quite often, considering it to be its national dish. To prepare a meal, you will need the following products:

  • Chicken (500 grams);
  • 1 kg of cabbage;
  • Cucumber (500 gr.);
  • 100 gr. Oil;
  • Radish (300 gr.);
  • Tomatoes (2 pieces);
  • 2 onions;
  • 6 cloves of garlic;
  • Eggs (4 pcs.)
  • Bulgarian pepper;
  • Thin noodles (0.5 kg);
  • vinegar;
  • salt pepper;
  • soy sauce;
  • sesame;
  • water;
  • greenery.

Kuksi in Korean is prepared as follows.

  • Boil the chicken. In a bowl, beat the eggs and fry them a few thin pancakes.
  • On the Korean grater rub radish and carrots. Cucumbers cut into four parts and finely shred. Onions are semirings. Cut cabbage with straw. Solem radish and leave it for a while, so that he let the juice. Cucumbers and cabbage are also seasoned with salt.
  • Finely chop the onion and pour it into a frying pan with sunflower oil. Fry till the appearance of a golden hue. Part of the onion is placed in a separate bowl (for salad dressing). Squeeze the cabbage from the juice and put in a frying pan. Fry until done. In the end, add ground coriander, paprika, black pepper, one clove of crushed garlic and mix well.
  • Chumi is what the Korean cuisine is famous for . Kuksi also includes this delicious, fresh and healthy salad. Squeeze juice from cucumbers and radish. We cut greenery and tomatoes. Pepper we cut straws, and carrots we rub on the Korean grater. In a deep bowl, mix all vegetables, place coriander, sesame seeds, garlic, paprika and pepper, and fried onions.
  • Boil the spaghetti and rinse them thoroughly several times. Traditionally, the cookie is prepared from special pasta, called Kuksu.
  • We disassemble the chicken into long fibers. Egg pancakes rolled rolls and cut into strips.
  • Seeds of sesame fry in a pan, cool and mix with sugar.
  • And now about the most important thing is how to cook the cookie. The recipe for this dish involves the use of broth according to a special recipe. In the pot, pour one liter of water. Add to it thirty grams of vinegar, two tablespoons of salt, three - sugar and the same amount of soy sauce. To your taste, kuksi-muri (broth) should turn out to be sweet-sour and quite saturated. For him, you should not feel sorry for the ingredients, as noodles can be fresh.
  • Strawed tomato, cucumber and greens. We put the vegetables together with the remaining garlic in the broth and mix.
  • In a deep cup we place noodles, around which we put pancakes, chicken fibers and salad. The dish is sprinkled with fried sesame seeds and poured into the broth.

To prepare Korean kuksi you can use all sorts of vegetable salads for a wide variety of recipes. Very tasty fried eggplants, dressed with scrambled onion and sunflower oil. Fans of spicy dishes can cook a toast from tomatoes, onions, Bulgarian and hot peppers.
