Polish soup zhurek is, perhaps, the most popular national dish in Poland. Prepare it for leaven from flour, to which vegetables, smoked meat, boiled eggs and flavored spices are added. There are many options for making this delicious dish, so you can choose any recipe or come up with your own.

Sourdough soup zhurek

In Poland, the yeast is already sold ready, but in our country it can be found in some hypermarkets. However, you can easily prepare it yourself if you use the following recipe:

  • Put half a glass of dark flour in a glass jar and a broken piece of rye bread.
  • Fill the food with half a glass of boiling water. If you want, you can add a little garlic and a couple of peas.
  • Close the neck of the can of gauze or a thin cloth, fix it with a thread and leave the products to infuse for three days.

Remember that the longer the leaven is, the sourer it becomes. Therefore, the maximum period of its maturation is five or six days.

Classic Recipe

Polish soup zhurek is often called "yesterday's" soup, as its taste is only improving the next day. To prepare a traditional dish we will need the following products:

  • 500 ml rye starter.
  • 300 grams of boiled sausage.
  • 200 grams of brisket.
  • Three cloves of garlic.
  • One carrot.
  • One onion.
  • 500 ml of cream.
  • Two chicken eggs.
  • Marjoram.
  • Parsley and bay leaf.

So, how to cook a zhurek (soup)? The recipe is classic you can learn from our instructions:

  • Pour into the pan water, put in it a peeled bulb, carrots, garlic, greens and bay leaf.
  • Cut slices of meat and sausage, and then fry them in vegetable oil with the addition of marjoram.
  • Strain the broth and remove the vegetables. Put the roast instead and continue cooking.
  • Stir the leaven with cream and pour the liquid into a saucepan.
  • Add the chopped garlic clove and a bit of marjoram into the broth. After this, let the soup stand for a quarter of an hour.

  • To begin with, make a leaven - put the prepared foods in the jar and pour them with boiling water. Then gradually enter cold water. Tie the neck of the dishes with gauze and leave the contents to wander for a few days. Do not forget to shake the yeast from time to time until it ripens.

  • Peel potatoes and carrots, wash them and boil until cooked in a large saucepan.

  • Leaven - one glass.
  • Bacon - 100 grams.
  • Water is three liters.
  • Horseradish grated - one tablespoon.
  • Sour cream is 100 grams.
  • White flour - two tablespoons.
  • Munich sausages are two pieces.
  • Eggs boiled - two pieces.
  • Potatoes - two tubers.

  • Salt.
  • Marjoram.

How is the soup prepared? The recipe for this dish is quite simple:

  • Prepare the leaven of these products and leave it to ripen from four to eight days. When the specified time has elapsed, strain the liquid through gauze and pour into a clean container.
  • Wash the mushrooms and soak them for one night. Boil them until cooked in the same water.
