- Prepare the filling so that it can cool down. 600 grams of fresh cherries free from pits and put in a colander to collect the flowing juice. Form the resulting liquid mix with 1.5 tablespoons of starch and a hundred grams of sugar. Put the mass on a slow fire and bring to a boil. Pour fresh cherries into the mixture and mix. The prepared filling is laid out on the cake only in a completely cooled form.
- Take care of the preparation of the cream, which must also be cooled prior to smearing the cake. 250 grams of cream, 33-35% fat, whisk with 150 grams of sugar and 250 grams of Mascarpone cheese.
- From the cooled dough roll a circle with a diameter slightly larger than the shape, so that there is a stock on the sides, cut off excess if necessary. Bake the cake in the oven at an average temperature of 15 minutes.
