Fried pies with meat - a simple recipe for a delicious dish

What kind of warm memories did you have from childhood? Grandmother's pies, the smell of fragrant fillings and heat from the stove. Each of us remembers with warmth how he tasted delicious fried pies with various fillings.

Let's talk a little about the origin of such a simple, not unusually delicious treat! Pies were baked in Russia for a long time. First of all, the word "patty" comes from the word "pie" (or "feast"). It was during the ritual feasts in Russia that the hosts treated their guests to this dish. Also in Russia, young girls were taught to cook pies as early as 13-15 years. And if the girl did not know how to cook, then she would not have been married. But still roast pies with meat were of great value in Russia , which will be discussed further. So, let's start cooking fried pies with meat. First of all, we must prepare all the ingredients. You should start with the meat filling, it is prepared the longest. The filling can be made from any meat - as they say, to your taste. Each housewife has her own recipe for fried pies with meat, but the simplest, in my opinion, is the following.

First you need to unfreeze the meat. We throw in the water, not necessarily boiling. As soon as the water boils, we begin to immerse in the capacity of the seasoning: salt to taste or size of the tank, a little onions and carrots. Before the end of cooking, we clean the onions, carrots and fry it until golden. Finally the meat is ready, and it is necessary to put it to cool. Meat filling for pies, as mentioned earlier, can be absolutely any, but it is better to use mixed stuffing (from pork and beef, with the addition of chicken fillet). Then the filling will be soft, juicy and fragrant.

While meat is cooling down, it is necessary to do the test. We need 1 kilogram of flour, dry yeast 30grams or five teaspoons, 20 grams of salt (about two teaspoons without top), 30 grams of sugar (tablespoon), 3 eggs, milk (mixed in half with water) 300 ml and 70 grams of creamy Oil.

We begin the process of kneading the dough: a mixture of water and milk warm to 40 degrees and add the yeast while whipping with a blender or a mixer. At the same time, our mixture is enriched with oxygen, the dough rises and becomes lush. This will have a positive effect on the taste of fried pies. Next, we sift the flour and add salt, drive in the eggs, sugar, and then pour the whipped mass with the yeast. And put the oil in the microwave for 3-5 minutes (with a capacity of 15%).

Mix the dough for fried patties with meat until the moment when it begins to get out of hand. This process takes quite some time. In the batter, pour out the melted butter, and after that you need to carefully knead another 10 minutes. When the mass becomes uniform, cover it with a towel and leave to stand.

We are engaged in stuffing. Cooled meat is passed through a meat grinder and mixed with a roast. Further we cut eggs together with onions and we interfere in a stuffing, also it is possible to add salt to taste. The dough is up and ready to use. We can start to make patties. A form for them can be chosen absolutely any - someone prefers round balls, and someone likes the classic oval pies. Some even like to sculpt triangles. So it all depends on the imagination of the cook.

After the pies are caked, you should put them in a frying pan and grease the egg with egg yolk.
