Pie filling

Almost all are lovers of home-made fragrant patties. The history of their appearance dates back to ancient Russia, when pies were baked from fresh and sour dough. As a filling used a variety of products and their combinations: mushrooms, berries, vegetables, fish, meat and much more.

The modern filling for pies is slightly different from the old Russian stuffing, but still the base remains the same.

1) Filling for pies with meat. Meat, of course, like everything, especially men. Meat filling is quite high in calories, so for those who want to lose weight, it's better to avoid meat patties. Meat in the filling can be combined with other products, such as vegetables.

Recipe 1. For cooking, you need 500 grams of ground beef (it can be pork, beef, chicken minced meat), onion - 2 pieces, garlic (one clove is enough), vegetable oil, salt, greens, black pepper. If the meat is lean, add a little butter, it will only add juiciness to your patties. Forcemeat fry in butter until half cooked, salt and pepper. Garlic chop and add to the meat. Next, fry the finely chopped onions and combine with the mince. Grind and mix with the filling. That's it, the filling is ready. It is perfect for both yeast dough and puff.

Recipe 2. As a basis, you can take the first recipe, just instead of minced meat use boiled chicken breast. Breast the finely chopped or pass through a meat grinder, then add the fried onions, garlic, salt and pepper. If desired, you can boil some rice to this filling. It will turn out unusually and delicious.

2) Filling for pies vegetable. Vegetable fillings are good in the period of fasting, when religious people limit their diet from food of animal origin.

Recipe 1. To prepare potato lean stuffing it will be required: three large raw potatoes, onion - 2 pieces, salt and vegetable oil. Potatoes and onions cut into cubes, all fry in vegetable oil until cooked. The filling, although simple, but very tasty.

Recipe 2. Pork filling for carrots. You will need three carrots of medium size, onions - 2 pieces, sugar, vegetable oil, parsley, you can use dill, salt, black pepper ground. For sweeties, you can add raisins to the filling, it will be very tasty. Carrots grate and cook until half cooked. Then add the raisins, salt, sugar, butter.

Instead of raisins, you can use dried apricots, prunes, in general, lots of options.

3) Sweet stuffing for pies. As a sweet filling is usually used berries, fruits, all kinds of jams and preserves, candied fruits and much more.

Recipe 1. Apple-currant filling. Rinse apples, peel them, cut into small cubes. The currant is also washed and combined with apples. In the resulting filling add sugar, you can slightly vanilla and cinnamon. With such a filling, you can bake not only pies, but donuts.

Recipe 2. A filling of cherry jam. Surely, many housewives know that jam usually follows from pies, that's why I advise you to add semolina or starch in the jam. They bind moisture and do not allow the filling to drain. Jam can be used any: raspberry, apple, pear, strawberry. In general, everything that you have prepared in the summer, is suitable for sweet stuffing.

Of course, all kinds of existing fillings can not be counted, since in each national cuisine its own pie filling, however, this is a completely different story.
