Dishes from kefir and the history of kefir in Russia

Not so long ago I was surprised to learn that such a popular drink in our country, like kefir, appeared relatively recently.

In 1908 a young scientist Irina Sakharova went to North Ossetia to try and find out the secret of kefir from the mountaineers. No one agreed to share it, but on the way home she was abducted by hot jigits at the request of the local prince. A terrible scandal broke out, it came to court, where the girl demanded a kefir leaven as a moral compensation.

So in Russia there was a kefir, and then and the dishes from kefir, long time not known in other countries. And in vain, after all kefir is considered one of the most useful products. I will not list all its useful qualities, because it will take too much of your time. I will only say that it normalizes the metabolism, increases immunity, is irreplaceable for the gastrointestinal tract, it affects the nervous system well. Modern research claims that kefir can serve as a preventive measure for diabetes, cancer, liver cirrhosis and other dangerous diseases. And this whole holiday of health is very low-calorie.

Not surprisingly, kefir has become a favorite product of nutritionists. With this diet, not only do extra pounds go away, but health does not suffer. And even from yogurt you can cook a lot of delicious dishes. What to make of yogurt? There is a wide variety of dishes from this sour-milk product. We will not list all here, but we will definitely share them with a couple.

Dishes from kefir

First. Bulgarian kefir soup.

For him we will need: 600 grams of sparse kefir, 300 grams of fresh cucumbers, two tablespoons of crushed walnuts, dill and sunflower oil, garlic, salt and paprika to taste.

Beat in a homogeneous mass chopped garlic, nuts, greens and butter. Add kefir, all together again, whip. Finely chopped cucumbers pour into the resulting soup. Salt and sprinkle with paprika. Can be diluted with cold water to the desired density. The first is ready!

The second. Cauliflower and sauce from kefir .

We need: 1 head of cauliflower, 500 grams of kefir, 50 grams of butter, greens, breadcrumbs, spices to taste.

Wash cauliflower, disassemble on inflorescences and boil in salted water until half cooked, dry. Preheat the oil and fry each inflorescence in the breadcrumbs. In a separate bowl, shake kefir, butter, greens and spices until the consistency of the cream. Ready-made cauliflower can be poured with sauce or served in a separate bowl and dipped cabbage into it. The second is ready!

And dessert. Cocktail "Vitamin".

For such a dish of kefir, we prepare: one apple, one carrot, one raw yolk, 40 grams of butter, 150 grams of kefir, lemon juice, salt, sugar.

Kefir, yolk and lemon juice to beat, add salt and sugar to taste. Apple and carrots clean and grind in a blender or grate on a fine grater, gently mix with kefir mass. Spread on glasses and you can enjoy.

So from simple products we prepared dishes from kefir for a full dinner, which is perfect for hot summer days, because they are not far off.

Experienced housewives know that kefir in the kitchen is irreplaceable. If you pour a piece of hard meat with kefir for a couple of hours, it will become much softer. Because of this kefir is often used as a marinade for shish kebabs.
