Blue cheese. What do we know about it?

Everyone knows that cheese with mold is a delicacy, but not all this delicacy was tried. This happens for entirely different reasons: rejection, fear, lack of awareness, and sometimes a simple lack of money. An ordinary buyer frightens off the smell of spoiled cheese, and the taste is not at all like that of pickled or cream cheese. But his connoisseurs will reply that the mold cheese is a delicacy, which must be eaten rarely and in small portions. Only then can you really enjoy this dish, which at first glance provokes the most natural disgust.

What kinds of cheese are there?

Cheese with mold is made from the most fatty milk, usually cow, but sometimes from sheep or goat, like the famous "Roquefort" cheese. There are several kinds of mold cheese:

- with a white mold crust - cheeses of this kind ripen in the cellars, where "noble mold" covers all the walls, and at the same time a crust of cheese heads ("Bree" and "Camembert");

- with blue mold - blue mold is also considered noble, it can be seen on a cut of cheese in the form of small impregnations. For the preparation of such cheese, a fungus is inserted into the head inside the head, and in order to spread the mold better, metal needles are additionally stuck (Gorgonzola, Roquefort, Ble de Coss);

- with a washed-up crust (red-clay) - this spicy cheese with mold is treated with special fungus cultures that color the crust in yellow, orange or red.

Is it useful to mold cheese?

If you use it in small amounts, yes. For example, such cheese with garlic is completely safe and ready for consumption. It contains a large amount of vitamins, phosphorus and calcium, as well as protein and amino acids. Nutritionists claim that the bacteria contained in the cheese, improve digestion. Which for most of us is very necessary, given the irregular diet and stressful situations. And Turkish scientists have proved that molds contain a special substance that accumulates under the skin, promotes the production of melanin and protects the skin from sunburn. That is, as we see, there is still a benefit from such cheese. Maybe this benefit is not so great as we would like, but, nevertheless, some positive moments still exist.

How to eat mold cheese?

Cheese should be at room temperature. It is best combined with crispy bread, crackers, fruits and vegetables or just cook the baked cheese in the oven. The English like to add it to the soup, the Italians to pizza, and the Danes simply eat with bread. There can be many options, but the result is always the same - an exquisite dish for real gourmets! If you often go to European countries, you should have noticed that such cheese can be found in many catering establishments . But in our cafes and restaurants to such a dish are treated with a little apprehension.

Is there any harm from such cheese?

Cheese with mold is prepared with the help of penicillin series fungi, which help to cope with many inflammatory diseases, and in themselves are not harmful. But if the cheese is consumed daily more than 50 grams, it is likely to earn dysbiosis and allergies. Categorically, one should not use mold cheese for pregnant women, since this negatively affects the fetus and can cause its death. Do not give cheese to young children, it can cause the development of a specific disease - listeriosis. And in general, it is better to use mold cheese once a month, then you will never have health problems. And remember that cheese is an important food product, and mold cheese is no exception. Try different varieties, and you will appreciate it.
