Aubergine roll is delicious!
Now, in the period of an abundance of fresh vegetables and fruits, we all strive to stock up on vitamins for the winter. And do you know which of the fruits in the East is called the "vegetable of longevity"? This is eggplant. It contains a large amount of vitamin B, as well as salts of potassium, phosphorus, iron and carotene. Therefore, dishes from aubergine are recommended for use in cardiovascular diseases, liver and kidney diseases. And this vegetable is an excellent fat burner.
A variety of dishes are prepared from the eggplant. It is fried, baked, boiled and even eaten raw. Everyone knows such a dish as "overseas caviar, eggplant". But let's be original and prepare a roll of eggplant. The article describes three simple and very successful recipes. And the first (by the way, the easiest) will be a roll of eggplant with a tomato. For him we will need:
- mayonnaise - 1-2 tablespoons;
- tomato - 2 pieces of medium size;
- common salt;
- vegetable oil for roasting;
- garlic - 1 clove.
Eggplant sliced along to long thin "tongues". We put it in a plate and salt it. Let stand for 10-15 minutes, then rinse with cold water. It is necessary to get rid of the extra bitterness that eggplants contain. We wash the washed slices with a napkin and fry to a confident golden hue on both sides in vegetable oil. Fried pieces are spread on napkins to make the glass excess oil (the eggplant is well absorbed). We begin to collect a roll of eggplant. To do this, put a clove of garlic into mayonnaise and mix it. Lubricate each slice with the resulting sauce. Cut the tomatoes into circles. For each slice we put a tomato and tightly roll into a roll. For the strength of the construction it is possible to pound it with a toothpick. The finished products are kept in the refrigerator for an hour.
- unsweetened cottage cheese - 60 grams;
- walnuts - a small handful;
- salt and pepper to taste;
- sour cream - 2 tablespoons;
- garlic - 1 clove.
In a blender, whisk cottage cheese, nuts, sour cream and garlic. Solim and pepper to taste. With the resulting mixture we spread slices of fried eggplants and turn them into rolls. Everything is very simple and delicious.
A third version of the recipe will be eggplant rolls in the oven. As in the first two cases, fry the eggplant. Further we take:
- tomato - 2 pieces;
- green onions - 1/4 of the beam;
- Grated cheese - 50 grams.
As you can see, one and the same eggplant dish can be made diverse and interesting. Enjoy your meal!
