Of course, it can be marinated and frozen, but it is drying that allows the vegetable to be kept almost unchanged and does not require much effort. And how to dry onions for the winter, let's talk in this article.

Which bow is best kept?

The general rule here sounds like this: sweet varieties have a poor quality. Well kept sharp and semi-sharp - the first have high cautiousness, the second - high or medium, depending on the variety. Not bad for storage of the following varieties:

  • Setton.
  • Bamberger.
  • Oporto.
  • Odintsovets.

There are others, do not forget about the hybrids. In addition, although the bulbs of these varieties are good in themselves, they also need suitable conditions and proper preparation. If your variety is not from "lezhkih", or it can not be determined - apply several methods at once, some of them will necessarily work.

How to prepare a vegetable for storage

Preparations are beginning in the garden, as drying the onion after harvesting is possible and there, if the weather permits. When growth has already stopped and feathers have fallen, vegetables are carefully pulled out of the ground and laid directly on the beds.

After the rain from the wet land, it is uncomfortable to stretch them, much more dirt. And it's harder to move, and drained vegetables are more difficult to dry. From completely dry land, it's easy not to pull it out, you have to dig it out with tools, and in this case there is a risk of damaging the bulbs or cutting off the feathers. The easiest way is to remove the bulbs when the ground is a little wet - then the turnip is easily pulled out and the clay adhered is easy to remove, enough to shake properly.

After the vegetables dry, you can transfer the process to the room, as it is correct to dry the onions not in the bright sun, but in the shade. Great for this grid stretched horizontally. Another good option is to hang everything on stretched ropes, or simply tie several bulbs into bundles and hang it in a shaded, well ventilated and sheltered place from the rain.

2 main ways to save the crop until next spring

Since drying onions for the winter in this way is possible only where there are free rooms, it is not suitable for everyone. The main alternatives are two: grind, dry in the oven and use as spices either to dry and store in bundles, bags, bundles and other hanging weaves.

The first method is perfect for cooking - dried and chopped pieces of bulbs can be thrown directly into the soup, and where necessary. The second method allows to keep the bulbs fresh and able to germinate.

Harvesting and storing onions in crushed form

How to dry onions for the winter as a seasoning: the onions and feathers are cut into small pieces, the onions first in rings, then these rings - into even smaller parts. All together, evenly placed on a baking sheet and sent to the oven for several hours, to dry with minimal heat.

After this treatment, the resulting dry spices are perfectly stored in tissue bags, glass and metal jars, in cardboard and wooden boxes. They retain a wonderful aroma and look, decorate the cooked dish.

Drying of whole bulbs

Unlike the first method, this one is easier and does not require so much attention. Whole bulbs can be dried on a grid, on boards, on the floor, but a prerequisite - that the room is well ventilated, there was not too humid, cold or hot. The first option is preferable, since drying the onion after harvesting on a grid is convenient because the air has access to vegetables from all sides, you can leave it unattended. Bulbs, which are dried on the floor and especially on the film, must be regularly turned over to be "ventilated" from all sides evenly.

Another convenient way - to tie in bundles or in braids and so to hang. However, this method is suitable only for already dried plants: if the feathers or the bulbs themselves are damp, they can start to rot. It is impossible to admit the presence of even one raw plant in the bundle - it will begin to rot itself and "help" the rotting of neighbors.

Storage in the form of braids, in bags and vrossyp

From well-dried plants, on which feathers are preserved, it is possible to bind very beautiful and decorative ornaments. How to dry onions for the winter? In the form of an ordinary pigtail in three strands, pigtails in four or six strands, a tourniquet, you can adapt for this kapron tights and stockings.

Look good with different varieties: a bow of golden color with purple and white, white with a dark red, for decorativeness, you can add a branch of viburnum or plastic fruits and vegetables. You just need to remember a few basic rules:

  • Onion feathers are fragile enough in themselves, so at the very beginning of the braid, add some twine, bandage or strip of fabric to strengthen the weave. For the same reason, do not weave braids too big and heavy.
  • Do not weave the bulbs closely against each other - it is advisable to leave a little space between them for ventilation.
  • Weaving should be stored suspended - and ventilation is better, and pests do not get.

However, the "braids" are not the only option, since it is possible to dry the onion properly and store it in sack kapron socks, stockings and tights, as well as in mesh bags. But before you get into these devices, the bulbs should dry well, and they need to cut off feathers - they do not need anything.

Onion storage conditions: temperature, humidity, ventilation

Completely dried onions of sharp and subacute varieties calmly available throughout the winter, if it is stored under the right conditions. With reduced humidity, bulbs dry out, with increased - they start to germinate, diseases can develop, for example, cervical decay. For semi-oleaginous varieties, t ° from 0 to -1 ° C and humidity of 75-90%, for sharp ones, from -1 to -3 ° C, with the same humidity. The second option is the temperature from +18 to +22 ° C. There is also a third one: in autumn and spring bulbs are organized from +18 to +22 ° C, and during winter frosts - from 0 to -3 ° C.

Leeks: a special approach

In addition to the onion, there are other interesting types of onions, one of which is leeks.

How to prepare a bow for the winter of this species is a separate conversation. Practice three main ways (excluding conservation): dry as a seasoning, keep fresh (in the sand or vegetable department of the refrigerator) or freeze.

The first method almost does not differ from the drying of onions. Similarly, the leaves are crushed into small squares or half-rings, dried in an electric dryer or in an oven.

In the vegetable department of the refrigerator with the correct preparation of leeks stored 4-5 months - all this time, it is quite edible, both on its own, and in salads. Frozen - also a good way: for this, prepared leeks, blanks from it in the form of leaves and stems must be cut. Then they should be put in a thin layer in plastic bags and sent to the freezer.

Recipes for the winter: onions and ways to improve it

Preservation is a very tasty and easy way to make onions even better, to give it an unusual taste, appearance and properties. The easiest way to preserve is pickling onions. Here you need a bay leaf, peppercorns, and also onions, water and salt. In this simple recipe, the bulbs must be cut into rings, put in a bowl, add pepper and bay leaf and pour hot brine, which is made at the rate of 200 gr. Salt for 1 liter of ordinary, and the best - clean well water.

All this is left for two days in a cold place, after which the onions are transferred to cans (with the addition of pepper and bay leaves) and poured hot marinade (marinade - ¾ cup vinegar to dilute in 1 liter of water). The rolled banks, as usual, are turned upside down, wrapped up, and then hide in the locker and wait for their time.

In addition to this very simple recipe, there are many others: from onions make confiture, it is marinated especially for salads, canned as a snack for sandwiches, even cooked as a side dish. All these simple and not very recipes for the winter onions do different, give it a new taste, smell, appearance. But this does not make it better or worse than classic bulbs. In fact, everything: both drying in the form of seasoning, and weaving in "braids", and pickling - these are different ways of making a delicious and beloved vegetable called onions.
