One of the favorite confectionery products from a batterless test is considered to be verguns. For their preparation use flour, butter, eggs, sugar and alcohol additives - cognac, rum or vodka. If none of this is at hand, you can add vinegar. In addition, the dough can put milk, sour cream or cream. Below is a recipe for virgins on milk, kefir. Despite the fact that verguns are most often made from a batterless test, we will tell you the way of cooking and on yeast.

Verguny: recipe for milk

For preparation of brushwood for this recipe, prepare:

  • 400 grams of flour;
  • Vegetable oil for frying (can be replaced with smaltz);
  • 3 eggs;
  • 75 grams of sugar;
  • 10 ml of cognac;
  • Milk - 70 ml;
  • 100 g of butter;
  • 70 g of almonds.

The process of preparation begins with the sifting of flour. After that, you need to grind the eggs with sugar, here, too, pour in cognac, melted butter and milk. Almond chop and add to the egg mixture. To the received weight gradually to pour in a flour and to make a dough. It should not stick to your hands.

Dough roll out a thin layer and cut into rectangles with sides of 2 and 10 cm. Inside each make an incision, fold in half and through the available hole, unscrew one end. Do this with all stripes. Heat the oil well, lower the formed vergones into it. In a few minutes you can enjoy a delicious brushwood with a golden crust. If the oil is not heated enough, the vergens will turn out to be too greasy. Put the finished products on a napkin. When the fat drains off a little, sprinkle the firewood with powdered sugar and lay it on a beautiful dish.

Soft crunches

Very delicious and delicate are obtained by verges on yeast. The recipe is described step by step. You will need:

  • 250 g of wheat flour;
  • 80 g butter;
  • 20 grams of yeast;
  • vegetable oil;
  • Half a glass of kefir;
  • A small pinch of salt;
  • Several art. Spoons of sugar;
  • 2 egg yolks.

Check the availability of the necessary products on the list and start cooking. Start with heating kefir, in which you need to dissolve the yeast, here add a little sugar and wait for the bubbling to begin. You need to sift the flour and make a hole in the middle. In it, pour kefir, mix everything well and leave it for a while in a warm place. When the opara comes up, add all the remaining ingredients, with the exception of vegetable oil (it is necessary for frying), and knead the dough. Leave for half an hour, after which roll out and form the verguns (how to do it, described in the previous recipe). Now it's up to the little thing: to fry the brushwood in vegetable oil and serve it to the table.

Use of modern technology

I would like to offer a recipe for virgins cooked in a multivark. To do this, you need:

  • Wheat flour - 250 grams;
  • A small pinch of salt;
  • 3 egg yolks;
  • Baking powder - 0,5 tsp;
  • egg;
  • Sugar - 40 g;
  • Butter - 70 g;
  • vegetable oil;
  • Sour cream - half a glass;
  • 1 tbsp. A spoonful of vodka;
  • Vinegar 9% - 1 tbsp. a spoon.

Prepare the above products and multivark. Now you can start cooking. Flour sift the hill, make a depression on top, where to pour the yolks and egg. Only after that you can add melted butter, salt, sugar, sour cream, vinegar, baking powder and vodka. Knead the dough and leave it for half an hour under the towel.

Form the verguns (you already know how). Turn on the multivarker, select the program "Multipurpose", set the desired temperature (enough 160 degrees). Pour into the bowl of oil for deep-frying, when it is well heated, in small portions fry verguny.

Before serving, sprinkle with powdered sugar, so they will look more appetizing.

The recipe for virgins in curds

Very unusual brushwood is obtained with the addition of cottage cheese. Take 250 grams of soft cottage cheese and thoroughly mix it with a fork. Separately, rub the egg with one tablespoon of sugar, mix with the prepared sour-milk product and rub well. In the curd mass, add ¼ teaspoon of salt, as much soda, extinguished in half a tablespoon of vinegar. Pour 150 grams of sifted flour and knead the dough. Further, the cooking process remains the same as in the above-described recipes.
