But already in the XX century, when consumers learned about the medicinal properties of Puer tea (which played a huge role in increasing the demand for this product), natural aging could not be completed to the end due to lack of necessary time. This was the impetus for scientists to develop a special technique for fermenting tea in a shorter time.

The technology of fermentation was as follows: the leaves of the tea tree from the Yunnan Highlands were placed in a reservoir and filled with warm water. This contributed to an increase in temperature in the tea heap and faster aging. According to the technology of making raw materials Puer Dalits tea is divided into two types: "raw Puer", that is, fermented naturally, and "forced Puer," that is made using the method of artificial aging. To soften the strength of the drink, during the warming of the kettle, pour the puerer with cold water, then pour it and add boiling water. Or do the same thing, but with the use of hot water.

Remember, water, brought to the boiling point (ie 100 degrees), will ruin the taste of Puer tea. Brew tea leaves need water, the temperature of which reaches 90-95 degrees Celsius. The first tea leaves last about 10-30 seconds, the next - 5-10 seconds. Starting from 4-5 tea leaves, the infusion time should be increased to 40-50 seconds.
