Strudel with apples from puff pastry

Strudel with apples from puff pastry requires skills of preparation of a basis, that is puff pastry. This requires the following ingredients: wheat flour - 350-450 grams, margarine - 150 grams, 150 grams of chilled water, 1 egg yolk, 10 grams of vinegar .

Sift flour through a sieve into a deep bowl. Pour in the water (cooled boiled), add the yolk, vinegar, beaten in a separate container with salt. The dough should be kneaded to a homogeneous mass, it is not necessary to strongly knead it. With prolonged mixing, it will become excessively plastic, which does not imply a technology for preparing puff pastry.

In order to reduce softness, it should be wrapped in parchment paper and placed in a refrigerator for 40-45 minutes. We take out the cooled dough and roll it out with a rolling pin on the working surface of the table into a layer of elongated shape. In the middle of it we rub on a large grater margarine (pre-frosted, for better grinding). Fold the side edges and roll the sheet again with a rolling pin. Movements with a rolling pin are best performed in one direction, as this will prevent dough breakouts. Next, the dough is added to three additions and rolled again. Once again we repeat the same manipulations and, closing with parchment paper, we place in a cold place not less than for 40 minutes. Such actions as addition and subsequent placement in the refrigerator, should be held at least 5 times. If by time you do not have the opportunity to cook puff pastry (which takes about 5 hours), you can use the ready-made semi-finished product, buying it in the sales network.

To make fruit strudel, you need the following products: apples (better than sweet and sour varieties) - 1-1.3 kg, nuts 100 grams, raisins or any dried fruits - 150 grams, butter - 70 grams, breadcrumbs - 70 grams. We clean the apples from the core and cut them into medium-sized cubes, raisin soaked in warm water, crush nuts to crumbs 2-3 mm in size. Butter the butter in a frying pan and add the rusks, fry until brown, you can add one teaspoon of cinnamon for the flavor. Raisins dry with a napkin and add together with nuts and apples in the breading mass. All knead to homogeneity.

To prepare a strudel with apples from puff pastry, it is necessary to roll out the layered dough on a soaked parchment with a very thin layer. On one edge of the layer lay out the prepared mass, then raising the parchment, gently begin to roll the dough with the mass into a roll. The edges are tearing. Lay the strudel on the parchment in the oven and bake at a temperature of 180-190 ° C for 35-45 minutes before the ruddy color. From the top strudel decorate with powdered sugar with the addition of zest. Serve to the table in a hot form, cut into portions with coffee latte or tea. Traditionally served with chocolate syrup or ice cream.
