Salo: caloric intake, benefits and contraindications

I want to note right away that lard was not used in food initially in Ukraine, as many people erroneously believe. It became known that for a long time, even before the cultivation of pigs by the Ukrainians, the pigs were also grown by the Chinese. Literally, a dozen years ago, experts were not allowed to consume fat, the calories of which are very high, especially for children, the elderly and people who have serious illnesses. It was also thought that fat is almost the most difficult to digest food. For ten years, the view on this issue has changed a lot. In the specialized medical literature began to publish articles on the benefits of fat, proper cooking and use. Also now, experts say that the body digests bacon much faster than meat. Let's talk about the properties of fat.

Certainly, fat, caloric content of which is not more than 800 kcal (mature pig), is very useful. However, for young children and the elderly, this calorie content will be quite high. For them, much more suitable fat, calorie content of which does not exceed 600 calories. It should be borne in mind that the smaller the age of the animal, the caloric content of fat is lower. For example, the caloric content of the young pig's fat is about 600 kcal.

If you take people living or working in the Far North, as well as those who go on long hikes and just lead an active lifestyle, then you need to keep in mind the next point. Calories entering the human body are taken out very long, and they are simply necessary for people who actively move, work physically and spend a lot of energy. They will almost always benefit from a bite of bacon (for example, in combination with bread and greens). Fat of pork, the calorie content of which is quite acceptable for people leading a mobile and stressful lifestyle, will not affect the mass of a person in any way.

It is worth noting that we are used only to lard. However, different peoples consume lard of sheep, bears, cows and badgers.

The composition of fat includes arachidonic acid, which is referred to the class of unsaturated fatty acids. It is necessary for a person to function well the brain, liver and adrenal glands. In addition, arachidonic acid improves the cholesterol metabolism in the human body. It affects the cells of the body and stabilizes the hormonal background. In addition, fat contains other practically non-replaceable acids. These include palm, linoleic, linolenic and oleic acid, which are contained in fat in the same volumes as in vegetable oil. In addition, fat contains a large number of vitamins A, D, E and carotene.

It is impossible not to say that fat, the calorie content of which is high enough, makes it possible to use it in cooking delicacies. Thus, the calorie content of fat becomes its dignity. From fat it is possible to prepare such tasty dishes as boiled fat, smoked bacon, salted fat, melted and fried fat.

As for the presence of cholesterol in fat, in moderate amounts it will not be superfluous. It is an integral part of all membranes and muscles in the human body.

It is important to note that lard will positively influence the body immediately after a person stops eating it in large portions. Do not overload your body with a lot of fat. After all, this is like, for example, drugs: if you drank one pill, it will become easier, and if 10 - it will be an overdose. Moreover, with the lifestyle that many residents of our countries lead (and which is very difficult to call active), even if you regularly eat 30 grams of fat a person may have extra pounds.

In general, dietitians advise eating only bacon, which is prepared in a saline-dry way. They also do not recommend eating fat to people with liver disease. In other cases, there is no significant restriction for the inclusion of fat in the diet.
