Salads for the winter - this is primarily a storehouse of vitamins. In addition, they successfully complement any dish and diversify your menu. Usually they are made from vegetables: tomatoes, cabbage, beets, cucumbers, eggplant, peppers.

Preparations of salads for winter usually take quite a long time. This is why not every hostess can boast of canned pickles on the table. But how nice it is to open a jar of appetizing conservation in the winter!

Let's try to prepare salads - blanks for the winter.

To prepare it you will need:

  • Tomatoes 3 kg.
  • Kilogram of onion
  • Bulgarian pepper 1 kg.
  • Salt
  • Vegetable oil 1 glass
  • A bit of ground pepper
  • Garlic 300gr.
  • A punch of bitter pepper
  • Dill and parsley greens

Preparation of salad.

We cork on fire oil, we spread in it a finely chopped onion and fry it until a golden hue is formed. Cut small pieces of tomatoes, add them to onions and stew for about 45 minutes. Slice chopped Bulgarian pepper, put it to vegetables and leave to extinguish for 15 minutes. After pouring ground pepper, chopped greens, bitter pepper and stew for another five minutes. In the end, add crushed garlic and boil for a few minutes. Then we put the salt and pour the hot salad over the sterilized jars. We roll it up.

Very tasty and delicate salads for the winter are obtained from eggplant. Here is the recipe for one of them.

Required products:

  • Sweet red pepper 2 pcs.
  • Two apples
  • Garlic 2 heads
  • 2 carrots
  • 2 onions
  • 5 kg. Eggplant

Sauce.

  • Vegetable oil 500gr.
  • Tomato juice 2 liters
  • 9% vinegar (glass)
  • Salt 100-130g.
  • 250gr. Vegetable oils

Preparation.

Mix the above sauce in a deep saucepan. There also put finely chopped onions and garlic, peppers, apples, grated carrots. Stirring, bring the vegetables to a boil. Eggplants cut into cubes of medium size and add to the salad. Cook all the ingredients for another 40-45 minutes. Cook the prepared food carefully on previously sterilized jars. Roll over.

Very bright and beautiful salads for the winter are obtained from colorful peppers.

To make a salad, take:

  • Small in size cucumber 2 kg.
  • Tomatoes 2 kg.
  • Kilogram of zucchini
  • Bulgarian pepper (different colors) 1 kg.
  • Patissons 1 kg.
  • Peas pepper, bay leaf, dill, celery and parsley.

Marinade:

  • Citric acid 4 table. Spoons
  • 1.3 liters of water

Preparation.

Well wash the cans for conservation, at the bottom each lay out greens, 3 laurel leaves, 4 peas of pepper. After that, wash the vegetables, cut them into small slices and lay them on each other in layers as follows: cucumbers, squash, then pepper, zucchini, and, last but not least, tomatoes. Between vegetables put chopped greens.

Ingredients for the preparation of marinade boil in a separate container, cool a little and fill them with assorted. Three-liter cans with salad sterilize for about 25 minutes, then wait until they cool down and roll up.

Very nourishing and appetizing salads for the winter can be prepared from beans.

"Rainbow"

To prepare a salad you will need:

  • Small tomatoes (green and pink)
  • Small cucumbers
  • Cauliflower
  • Small Onion
  • Green beans
  • Garlic
  • Pepper colored
  • Carrot

Vegetables are taken in the same proportions, about a kilogram.

Marinade:

  • Liter of water
  • One and a half tablespoons of salt
  • 6 peas of pepper
  • One and a half cup of sugar
  • Carnation (16 buds)
  • 7 spoons of vinegar

Preparation.

Peel the carrots and cut into thin slices. If the cucumbers are rather small, you can put them whole, if large - cut into circles. Slice the beans into pieces (3 centimeters long). Onions and tomatoes are put whole. Rinse cauliflower and dissect into inflorescences. All the prepared vegetables mix and place neatly on the jars.

Separately boil the marinade from these ingredients and pour it salad, 2 centimeters without topping up the neck. Sterilize the cans with salad in a saucepan with hot water for about 20 minutes, and then roll them.

Billets for the winter are ready!
