Plum liqueur at home. A few simple recipes

Home made berries are the best complement to dessert. And one of the most delicious is plum liqueur. At home, it is quite easy to cook, even if you do not have your own garden or a plot in a cottage, plum trees. At the time of a generous harvest, the price of these fruits reaches the lowest levels, so it is possible to buy a bucket of raw materials, probably for everyone. And then - add sugar and strong alcohol (not necessarily the most expensive, but high-quality), and get a delicious plum liqueur in the home, which, of course, is much tastier and more useful than the store fruit drinks. In addition, you are completely sure of its composition, since you made a drink with your own hands!

Plum liqueur at home

Well-matched (maybe even slightly overripe) fruits of cultivars are suitable as raw materials. It can be a renklade or a Hungarian, a mirabel or an egg. If you suddenly get caught wild, then do not be upset, just the amount of such an ingredient as sugar, increase by about 40 percent, then we will achieve a good result. What does it take to make a plum liqueur at home? A simple recipe includes only three ingredients: sugar, plums and vodka. For every 2 kilograms of raw materials (already pitted) you need to take half a kilogram of sugar and a half liter of vodka. Vodka can be replaced with diluted alcohol (up to a strength of 40-45%), well-purified moonshine or cognac.

Plum liqueur at home. Recipe

  1. Fruits carefully washed in water. We clean from leaves and stems, bones and possible rot. You do not need to remove the peel.
  2. Further, the resulting pulp should be crushed to a state of homogeneous pulp. This can be done using a blender, a meat grinder, a mixer, even a wooden rolling pin - all the same as, most importantly - the result.
  3. Kashitsu fall asleep in a clean three-liter jar and add sugar. Mix thoroughly.
  4. We lock the jar with the lid and set it on the sunny place for three days in order to let the mass juice.
  5. After add the liquor and mix. We lock it with a lid and set it aside in a cool (10-15 degrees) to insist. The process lasts about a month and a half.
  6. Then the drink should be filtered through gauze and cotton wool, filtered to transparency.
  7. At the output of this quantity of ingredients, we get a plum liqueur at home - up to one and a half liters. Spill into bottles and close with cork lids. You can store in the basement or in the refrigerator at the bottom - up to two years. The drink has a pronounced plum flavor and delicate aroma, color from yellowish to amber brown depending on the varieties of selected fruits.

Plum brandy on gin

One of the options, how to make plum liqueur at home - to replace vodka with gin or rum. What is typical for this recipe: the liqueur is cooked in the microwave by the express method, so to speak.

We need: 1 kilogram of fresh and ripe plums, half a kilogram of sugar, a bottle of rum, real, pirate (you can use gin).

Preparation

  1. Plums are washed and released from the pits and pedicels.
  2. We put them in a blender together with sugar and turn into a homogeneous gruel.
  3. In a glass bowl, mix the fruit with the gin and put it in the microwave on the median power (for 10 minutes). Then, the power is minimal and we'll take another thirty minutes, then stirring occasionally.
  4. We take the container out of the microwave and let it cool down. Filter and filter. You can pour into bottles and let it brew, but you can immediately use it. So you can get a "quick" plum liqueur at home. The recipe is good for those parties, when the guests are expensive already on the way, and you want to treat them with something delicious, along with the dessert already prepared.

"Japanese" home-made liqueur-liquor

The Japanese are famous fans of plum alcohol. Now in many supermarkets there are quite capacious banks with unreadable hieroglyphs filled with halves of plums in amber, brownish, greenish liquid. This is the so-called Japanese "wine", and in fact - low-alcohol liqueurs or tinctures on fruits. They are quite expensive, especially at the present time. But such an exquisite and original drink is quite capable of cooking by yourself in the kitchen.

We need: several cans with closures to the closure (capacity - 1 liter), 3 kilos of ripe plums of cultivars, 1.5 kilograms of sugar, one and a half liter of vodka, half a liter of cognac (the aging time of the grape drink does not matter: one can take And three-year, most importantly, to quality and not fake).

Preparation

  1. Plum well rinsed and sorted, removing the stone and tearing away the peduncle. We break fruits in half. If they are too hard (which is not recommended), you can lightly sow on the fault to let the juice.
  2. Two-thirds of each of the prepared cans is stuffed with halves of plums.
  3. We make a thick sugar syrup from a small amount of water and the total amount of sugar specified in the recipe.
  4. In the syrup, add vodka and cognac and mix thoroughly until the state of uniformity. Some prefer to throw in the pouring and a few buds of cloves, cinnamon, ginger, lemon zest. But you can completely do without these procedures, since the spices only interrupt the delicate aroma of plum.
  5. Fill with a mixture of halves of fruits in jars, let them cool down and cork. Insist the pouring will be for several months, no less, in the cool and dark. Then you can use.
