Mullet is a fish of the marine genus, which belongs to the detachment of the mullet and has about 100 species. Its usual length reaches 40-50 cm, and weight - up to 7 kg. The mullet is found mainly in subtropical and tropical marine areas, as well as in fresh water. There are several species that live in the fresh waters of Madagascar, tropical America, Southeast Asia, New Zealand and Australia. On the territory of Russia mullet fish has eight species: the forehead, the wolf, the singil, the pilengas, and others.

How to cook mullet fish ?

There are different ways of making this tasty and juicy fish. It is fried on a grill and in oil, baked, extinguished.

For example, in Turkey, in any coastal region, there are favorite recipes for cooking this tender fish.

Fresh mullet, which has just been caught in the sea, sent to fish markets since the morning, but here it is bought up by owners of local restaurants and just ordinary housewives.

Fish mullet, the recipes of which are very diverse, will be no less tasty, if it is prepared according to the popular Turkish recipe. Such a useful, fragrant, delicate and tasty dish will please not only your family, but also dear guests.

So, here's what products you need to prepare for making mullet with potatoes in Turkish: one fresh mullet (weighing about 1 kg), two medium onions, three carrots, three medium potatoes, two tomatoes, one whole lemon, two cloves of garlic, a bunch of dill , A bunch of parsley and olive oil in the amount of 120 grams.

Now let's go directly to the preparation.

First, clean the fish, wash it in cold water, cut into portions (2 to 3 pieces per serving). Next, clean and cut into slices carrots, potatoes and onions. After that, pour the tomatoes with steep boiling water, peel them from the peel and finely cut into cubes.

Now, on a prepared skillet, heat olive oil, put potatoes, onions, carrots and tomatoes into it and cook until half cooked.

Put the pieces of mullet in a pan with a few fretted vegetables, season with salt and pour the juice of one half of the lemon. Extinguish everything together until ready (15-20 minutes).

Before you put the fish on the table, sprinkle it with chopped garlic, sliced with herbs and decorate with remaining lemon slices.

How to prepare a mullet for fish stuffed?

In order to prepare a mullet stuffed, you will need the following ingredients: a kilogram of fresh mullet, two and three pieces of onion, a pound of champignons, a glass of buckwheat, parsley, dill, three chicken eggs.

Rinse the mullet and clean it. Carefully cut the head, remove the intestines, but the abdomen should remain intact. Now finally cut off the head, gently remove the skin from the fish. Rinse the resulting fish skin "stocking".

Next, from the skin, gently cut the fish, but so that the "stocking" is not damaged. Separate the bones from the fillets, and twist the fillets in a meat grinder, chop the peeled onions and fry in a pan. Then boil the mushrooms, cut them into strips or cubes, mix with fried onions and continue to stew for about five to seven minutes.

Now rinse the buckwheat and boil it, as well as chicken eggs and chop them and greens. Now mix all the ingredients and the mass that turned out, stuff the fish "stocking".

Put on a baking sheet, which is oiled, prepared mullet, pour mayonnaise and bake in a hot oven until completely ready.

And now advice: when you buy a fresh mullet in the morning, and cook it in the evening, it will be better to clean it immediately, rinse well, always in cold water, then put it in a container, cover with a wet towel or napkin and leave in the refrigerator until the evening. So the mullet fish completely keeps its freshness.
