Moroshka is one of the most common berries of northern latitude. It grows in the wild, and it is extremely difficult to cultivate, so it takes a special place in cooking.

What is this berry?

Moroshka is rich in omega-3 fatty acids, vitamins and antioxidants. For this reason, the question often arises: how to prepare this tasty and healthy berries for the winter? Of course, you can freeze it, but to store it in this form will take a lot of space in the freezer. In the fresh form, the storage period is very limited. Therefore, the most suitable way is cloudberry jam.

This delicacy can be consumed by itself, as well as served with waffles and pancakes. In addition, it can be used as an ingredient in other sweet dishes, as it has a mild flavor and a delicate aroma.

This berry contains a lot of benzoic acid, so cloudberry jam can be stored in the refrigerator for a long period of time and does not deteriorate. In addition, you can add to it half a teaspoon of citric acid or lemon juice for additional sourness in taste. So, how to make a cloudberry jam ?

The following ingredients will be needed:

  • 500 g cloudberry;
  • 250 g of powdered sugar;
  • ½ teaspoon of citric acid;

Cooking method

Wash and pick berries, separating the overripe and substandard. This can be done in deep containers or by soaking cloudberries in the sink. Then treat the selected berries with hot water for the purpose of disinfection.

Use a sieve and gauze to squeeze juice from the berries.

Drain the juice in a saucepan and put it on a stove, bring to a boil and gradually add sugar (its amount can be varied to taste, but the approximate proportion is 5.5 cups of sugar per 4 cups of juice).

Add a bag of pectin after the sugar has completely dissolved. Stir the mixture continuously and bring it back to the boil. How much to cook jam from cloudberries? After the jelly begins to boil very strongly (the bubbles will continue to form, even when you continue to mix), mark 1 minute. At this time, thick foam starts to rise, so you should continue to stir the mixture, not allowing it to pour out of the pan.

When one minute has passed, remove the pan from the fire and allow it to stand. You can see a layer of foam on top. Take a spoon and carefully remove it. Foam is also usable, so just put it in a separate bowl. You can eat it with tea or white bread.
