Mushroom hodgepodge for the winter

  • A few forks of cabbage - about 3.5 kg;

Technology of preparation

Mushroom hodgepodge for winter on this recipe is prepared as follows.

1st step

To begin with, the mushrooms need to be cleaned and washed. For a salted salad you can use any varieties: podberezoviki, honey agarics, butter mushrooms, champignons. Boil several liters of water, add salt to it and mushrooms. If you have small honey mushrooms or pimples, you can not cut them, larger ones should be crushed.

While cooking mushrooms, chop the onions. It can be cut in any shape. In a large frying pan, heat oil and fry all 2.5 kilograms of sliced vegetables. Roast onions in separate portions, otherwise it will turn out stewed, especially if you use a small capacity.

If necessary, rinse the cabbage, dry it. After that, chop it on a special grater or with a knife. Do not cut it. In a separate bowl, place the onions together with the cabbage. Pour the remaining oil into it.

Wash all the tomatoes, cut them into pieces of arbitrary shape. Lay it to cabbage and onions. Remove the mushrooms from the broth and put into the pan to the rest of the ingredients. Fill with salt. Stir. Turn on the heat and simmer the mixture for about 40 minutes. A little tip: if you want to reduce the amount of oil, then instead of it add broth or plain water. Mushroom hodgepodge for winter will be less caloric.

Step 5

Prepare the jars. They need to be sterilized. Or you can do otherwise. In each of the jars, place a few peas of black pepper, place a hodgepodge and put it in a large container with water. Cover the jars with lids and hold them in a saucepan for about 40 minutes at a low level of fire. This method is more preferable, since additional heat treatment will make the hodgepodge softer.
