How to cook dumplings

Dieticians unanimously assert that it is impossible to get involved in ravioli and that it is generally better to exclude them from the diet. But after all, millions of our compatriots, when asked about the most favorite dish, without hesitation, will give an answer: "Pelmeni." The well-known Mikhail Bulgakov very accurately noticed that deliciously cooked dumplings can be dragged out in broad daylight straight out of the jacket pocket, because the pelmeni spirit is very strange to the Russian man.

Those who do not know how to cook dumplings, but really wants to surprise their household members, it is necessary to decide on a recipe. After all, there are many varieties of pelmeni. For example, there are pelmeni with pomegranate sauce, pelmeni with goose liver, pelmeni with five kinds of meat, with mushrooms, with fish mince.

So, how to make delicious dumplings at home?

To do this, we need a kilogram of minced meat: equal parts of beef, lamb and pork. Meat properly washed, cut into small pieces and two or three times through a meat grinder along with three large bulbs. In the stuffing can add 300 g of cabbage, also passed through a meat grinder.

Dough for dumplings. On the table, a kilogram of wheat flour is poured down a hill, at the top is a depression, into which it is necessary to pour two eggs. Then two glasses of water are gradually added to the dough. Dough knead until the flour has absorbed two glasses of water and the whole mass will not become uniform and elastic. Experienced housewives wrap the dough for thirty minutes in a damp towel to make it even more elastic.

So, the dough and stuffing are ready for us. Now you need to roll out the dough with one large cloth, previously sprinkling the table with flour. In order to make even circles on the canvas, usually use a glass or a glass. In each circle is a juicy stuffing. The edges of the circle are neatly fastened, a crescent is obtained. Then the ends of the pelmeni are joined together so that a "ear" is formed. If the ends are unstuck and poorly fastened, they can be moistened with water.

Dumplings are placed on a floured board and cleaned in a freezer, then, when they harden, they can be packed on sachets.

How to cook dumplings? The pan (preferably wide) with water is put on the gas, remember that pelmeni must be filled in boiling water, so that they do not stick together and do not form porridge. Water should be salted, two or three laurel leaves, several peas. How long does it take to cook dumplings? Usually in ten to twelve minutes they come up, you can cook them for another two minutes and turn off the gas. Some prefer to eat dumplings with broth. If you do not like broth, then the "ears" can get a noisy and dry them a little for a couple.

Beginners do not know how to cook dumplings, nor how to properly serve them to the table. The prepared dish can be presented with sour cream, with butter, with ketchup, with soy sauce. Gourmets add a little vinegar to the broth. You can prepare yourself a delicious sauce for dumplings. For example, mix mustard with tomato paste and herbs, add mayonnaise or sour cream to the sauce. You can add crushed dill and parsley to the sour cream, grated garlic and ground pepper.
