How to cook beef rolls with mushrooms or cheese: interesting recipes

Surprisingly tasty and beautiful dishes can be obtained by folding small things from the meat mass, placing inside them a different stuffing. By this principle, beef rolls are also prepared. As the shell, you can use whole plates of meat, previously slightly beaten and pickled. Also, the original version can be wrapped piquant filling in a mass of minced meat.

Beef rolls with mushrooms

As a filling in this dish, we use an amazing product - the enokitake. This Japanese mushrooms are white, having small hats and thin long legs. Before wrapping in meat, the filling is not additionally treated. But the gravy, in which the beef stew is stewed, is characterized by a special piquancy and saturation. Meat plates (400 g), pre-beat off slightly to obtain a uniform thin layer, then place them for 15 minutes. In marinade from 1 tbsp. L. Soy sauce, 1 incomplete tsp. Garlic dry powder, 2 tbsp. L. Any vegetable (preferably olive) oil. Mushrooms (200 g) prepare according to the size of future rolls. Wrap them tightly in meat pieces. It is allowed to protrude from both edges for 2-3 cm. Fry quickly until red on hot oil. Half-finished roulettes are folded in a saucepan and poured with a sauce: 1 faceted glass of water or lean meat broth, 1 complete tsp. Corn starch, sugar, black freshly ground pepper and table salt. Extinguish, slightly covering the lid, about half an hour.

Is it possible and how to make a small roll of minced meat?

Of course, it is much more convenient to wrap the filling in pieces of meat cut into thin plates. As a rule, before filling, they are beaten a little bit through polyethylene film or silicone. Also, to give softness, it is possible to slightly preform the preforms. But it happens that not always available meat piece can be cut into neat, equal in thickness and size plates. In this case, you can try another cooking option. It turns out a very tasty and juicy dish when used as an outer layer of minced meat. And in order to keep the beef rolls well in shape, they are also wrapped on top with long pieces of bacon. After frying, the upper layer becomes rosy and strong enough. Thanks to this, the internal juiciness of both toppings and ground meat is preserved. Composition of minced meat loaf

The dish consists of three layers. Consider what you need to create each of them.

Composition of variegated and juicy stuffing:

- 200 g of fresh mushrooms (it is best to take champignons);

- 2 tbsp. L. Cleaned (odorless) any vegetable oil;

- 3 large cloves of garlic;

- a large bunch of fresh spinach (about 150-180 g);

- 2 large fleshy Bulgarian fresh peppers (red color);

- 3-4 medium soft sun-dried tomatoes;

- ½ or slightly more tsp. Table salt;

- 1 with the top of the station. L. Italian piquant dry seasoning (can be replaced with Provence herbs).

Composition of stuffed "fur coat":

- 1 kg lean without films and veins of beef;

- 1 fresh chicken egg;

- 1 large clove of garlic;

- a small bunch of greenery (parsley, basil);

- a pinch of dry oregano;

- ¼ tsp. Sharp freshly ground pepper;

- a pinch of cayenne red pepper;

- ½ or slightly more tsp. Salt.

Composition of the fixing layer:

- 7 to 10 long and narrow pieces of bacon.

Preparation of minced meat rolls

One large roll can be made from the offered products. In the cooled state it will look very beautiful in the form of cut transverse plates. If you want to serve beef rolls with heat and heat, make small portions.

Preparation of the filling

Mushrooms clean and chop small thin plates. Garlic chop with a sharp knife. On hot butter quickly fry the mushrooms, evaporating the liquid. After 15-20 minutes. Add garlic, flavored spices, chopped spinach and salt. Stroke a few minutes. After cooling, mix with peeled and sliced cubes with sweet fleshy pepper and dried tomatoes.

Formation of the minced layer

Cut the meat finely (if necessary 2 times) through a meat grinder. Stir in the mass crushed and chopped garlic, sharp green knife, spices and chicken egg. After a good beat, season with the mixture. Spread the parchment paper on a baking sheet and spread the minced meat on it with a layer of 1.5 cm. Top with the filling. Gently lifting the parchment, gradually fold the mass.

Place the roll in a preheated oven and fry for 50-60 minutes.

How to cook beef rolls with cheese?

Similarly to the first proposed option, you can get a slightly different in appearance and taste dish. This recipe for beef rolls assumes another filling. Use cheese as a filler. It is best to take solid grades that, when heated, are melted and converted into a homogeneous, viscous mass. In order for the filling to be ready, it takes a minimum of time, so the meat shell for more softness needs to be prepared accordingly. Firstly, it is advisable to use young beef or veal without streaks and foreign films to prepare the dish. When cutting, try to move along the fibers and form the same thickness of the workpiece. Then cut the pieces carefully with a kitchen hammer through food film and place in a marinade of wine, vinegar or lemon juice. Cheese grate on a large grater or cut into cubes. Put on each meat slice about 1 with the top st.l. Fillings, wrap products in rolls. Place on a baking sheet and bake until cooked.
