Take a noise and lower one squid in boiling water. Hold it for exactly 15 seconds. Then remove and cool. Supporting the boiling of water, alternately lower all the squid into it. In the same way, you can boil unpurified shellfish. Welded for such a short time, they will retain sufficient volume, elasticity. You can even make an experiment by welding two squid. One hold in boiling water recommended 15 seconds. Another boil for five minutes. You yourself will clearly see that the volume, appearance, texture and even taste in the second case will be much worse. It has been scientifically proven that the squid protein has a specific specificity. If it is cooked for more than two minutes, it becomes firm.
