Eclair's Recipe

The delicious taste of eclairs is familiar to everyone from childhood, but not everyone knows how to cook eclairs yourself. In fact, it's not as difficult as it may seem. The following recipe for eclairs will make a wonderful dessert.

The eclairs are prepared from a custard batter. For cooking about 20 cakes you will need:

4 eggs

100 gr butter (creamy)

250 ml of water

1 tbsp flour

Half a teaspoon of salt

Dough for eclairs.

Water should be boiled, then, without subtracting the fire add oil to it. After it melts, fill in the salt.

After this, start gradually adding water to the oil and salt flour, stirring the mixture continuously.

After stirring the thickened mass until the lumps are completely dissolved, remove the container from the dough from the fire, and allow it to cool.

When the mass becomes warm, but not hot (otherwise the added eggs are cooked), one by one beat the eggs into it. After adding each egg, stir the dough well.

Baking.

When the dough is ready it can be baked. Do this in the oven, heated to 180 degrees. The recipe for eclairs involves a variety of forms of baked cake. You can form small balls from the dough, moistening the palms with water. Spread the balls from the brewed dough on a baking sheet lubricated with oil or covered with baking paper. You can make oblong cakes with a pastry syringe or bag. If there are no special shaped attachments, make a few shallow longitudinal incisions on the surface of the oblong cake, then the eclairs will turn out more beautiful. Bake eclairs a little more than half an hour, at a temperature of 180 degrees, without opening the oven.

Filling for eclairs.

Custard can be prepared as follows:

Boil half a liter of milk, and let it cool down a little. 4 Yolk pound with 200 grams of sugar, vanillin and 50 grams of flour. Oily cream is prepared even easier:

250 grams of chilled butter, whisk together with a mixer. Then, without stopping whipping, pour in a jar of condensed milk. Add the vanillin. Once the mass becomes uniform, the cream is ready. Instead of condensed milk, you can use sugar or powdered sugar. To change the taste of the cream, add cocoa or lemon juice during whipping.

Instead of a cream for stuffing eclairs, you can use boiled condensed milk.

Very delicious eclairs will be obtained if they are filled with curd filling: whip the cottage cheese with a small amount of sour cream and powdered sugar. During whipping, you can add berries or fruit.

You can stuff eclairs in two ways: using a pastry syringe, or cutting cakes, and joining the halves together, after putting the filling in each of the two halves.

Decoration of eclairs.

To make cakes more appetizing, pour them on top with frosting or melted chocolate and sprinkle with powdered sugar, coconut shavings or crushed nuts.

The recipe for eclairs is universal due to its unsweetened test. If you start them with chopped herring or cheese mass, you will get an unusual cold snack. To prepare the filling of unsweetened eclairs, you can use the cottage cheese with herbs.
