Dry wine from grapes 'Isabella'

One of the oldest crops in agriculture is undoubtedly grapes. And for all the time of its cultivation, mankind has brought out more than seven thousand varieties of this fruit crop, each of which is unique in its own way. All of them are distinguished by taste and color, the size of berries and bunches, as well as other properties. Many varieties of this culture are table, that is, suitable for eating. But even more varieties are considered technical and of them make juice or wine.

But that wine from grapes turned out qualitative, it is necessary to harvest in time and correctly. At the same time, the main criterion of which type of house wine will come from a particular variety is how much acid and sugars are contained in the berries. That is, when berries have accumulated, for example, 7-9 g / l acids and 17-20% sugar, then they will turn out to be a dry white wine. And when berries contain 6-8 g / l acid and 21% sugar, they are suitable for making dessert wine.

But at the same time, wine from grapes, which is collected too early, will turn out to be slightly vapour and tasteless. And too overripe grapes have a lot of sugar and few acids. And the wort from such berries, most likely, up to the end will not throw out. And if it does, the wine will turn out to be too strong and heavy to taste. Therefore, the grapes from which they will make semisweet and dessert wines are harvested fully mature and even slightly overripe. Also, for some dessert wines, the bunches are specially left to wither on the bushes. This gives the ready-made drink a pleasant raisin tone.

And to determine the full maturity of grapes is easy. Mature berries are made soft, and the skin on them becomes thin. Also, this peel is easily separated from the pulp. And if the grapes belong to the white variety, then its berries shine through. And if you crush such a berry, then your fingers should stick together. And if you crush a red berry, then the fingers will also be painted. Seeds, too, are easily separated from the pulp, and the crest rustles and turns brown.

Also, except for the degree of maturity of the berries, the weather at which this grapes were harvested is of great importance. After all, its surface contains wild yeast in sufficient fermentation amount. In this regard, to keep these yeasts preserved, the grapes need to be harvested in dry weather. Also, berries can not be washed, even if they are all in dust. And in the process of making wine from grapes perfectly self-clarifies and all this dust precipitates.

As already mentioned, varieties of grapes are many. And one of them is a variety called "Isabella". It is widely distributed in Azerbaijan, Georgia, Dagestan and the Krasnodar Territory. Also "Isabella" grows in Moldova and in Ukraine. This late variety yields a good harvest, besides it is not afraid of fungal diseases and frosts. And it refers to the table-technical varieties, that is, it is more suitable for the production of juice or table wine than for consumption in food. Therefore, homemade wine made from grapes "Isabella" is produced both in the south, and in the middle band of Russia, as well as in other CIS countries, in which this variety has become well established.

And every gardener can make wine from this kind of grapes, which he himself can grow on his plot. For this, there are several recipes. Some winemakers press grapes together with twigs, others - the berries are separated from these branches. This stage of work on the production of house wine is the most painstaking, but, nevertheless, very necessary. Since twigs or dry berries can spoil the taste of a future drink.

Further, ragged and sorted berries need to be folded into a large container. Keep them so long is not worth it, since they can start wandering ahead of time. Therefore, as early as possible, you need to start pressing these berries. This is done by the usual tolstick, which is in every kitchen and is intended for potatoes. And you need to peel the berries very carefully, so that each burst and give away its juice. After such manipulations, the oil cake will be at the bottom, and the juice - at the top. Then this juice must be drained using a gauze or colander. And if you add sugar to it, boil it and preserve it, you can get a stock of good grape juice for the winter.

But if you act further, you can also make a good wine from it. For this, special utensils are needed, in which glass bottles of 5 to 20 liters are ideal. It is in them that the resulting juice needs to be drained. But you can not fill them up to the very top, enough and 2/3 of the volume. And in the rest of the space, the wine from the grapes "Isabella" will "play".

For this process to pass as it should, you need to build a special mechanism. It consists of a lid with a hole into which a tube is inserted. And the other end of this tube is lowered into a jar of water. All this design goes to the cellar, the temperature in which should be about 5 degrees of heat. And there the wine will wander about 2-3 months. All this time, the fermentation process must be carefully controlled. As often as possible, it is necessary to check whether water bubbles in the jar and periodically wash this jar, and also change the water in it. And if this process fails, then you need to check the tightness of the lid, otherwise the wine can turn into wine vinegar. And in this way, by the New Year, a good home-made dry wine will turn out, which has a fortress of about five turns.
