Homemade wine from grapes: the basic laws of a good drink

Wine is, perhaps, the most ancient drink, the technology of cooking which has reached our days. It would seem that the recipe for its preparation is not complicated, but at the same time it is not so easy to create a delicious homemade wine from grapes - one must strictly follow certain canons. They relate directly to the fruits themselves, which are collected for making a drink, juice squeezed from berries, tare, in which the juice will be poured until it is ready and, of course, the storage itself, however, let's take care of everything in order.

Fruit

As for the harvesting of fruit to squeeze the juice, then everything is very serious, and the preparation for this step must begin with the planting and care of the vine itself: the wine accumulates in itself all the positive and negative energy that was transmitted to it at all stages of creation. For the preparation of a drink it is necessary to select the best fruits, among which there should not be rotten and green berries - they even in the smallest amount will necessarily spoil the taste of the finished wine.

Sugariness

This rule applies to pressed grape juice. Wine specialists say that if you want to make the perfect home wine from grapes, then the sugar content of the juice for it should not be less than 20% - otherwise the wine will have little alcohol, which will negatively affect the stability of the drink. In order to get a juice with the necessary level of sugar, you need to collect only the ripe fruit. However, in most cases, even this does not help to reach the desired level of sugar, therefore sugar is often added to the juice, an example of which is the recipe for wine from Isabella grapes - it provides for the addition of 40 g of sugar per liter of juice.

Grape sort

If you want to make homemade wine from grapes - plant in your garden a vine of a grape of a wine grade - only such approach for preparation of a qualitative drink. To date, there are several varieties that are ideally suited for this: Regent, Crystal, Festival, Saperavi North and Stepniak. Many beginner winemakers make a big mistake at the very beginning of the journey, planting grapes of Lydia and Isabella varieties in their gardens: they are absolutely not suitable for making quality and tasty home-made wine. First, everything spoils the large amount of mucus contained in them, and secondly - the increased level of acid in the skins of berries. And besides, wine from Isabella grapes at home is obtained with a deposit that accumulates at the bottom of the container during storage, and then can be deposited in the liver.

Tara

Homemade wine from grapes of any sort is very exacting to the purity of the container prepared for its storage. Check its suitability is very simple. Take the barrel and put a piece of lit sulfur in it, then close the container. After some time, evaluate the result: sulfur burned - fill the juice and insist the wine, and if not - steam the barrel with soda until the sterile sterility is reached.

Storage

To store the drink you need to prepare a separate place (near should not be stored vegetables, animals are kept). Wine as a sponge absorbs not only all the surrounding energy, but also smells. The ideal time for wine infusion is one year. During this time, it will just be able to acquire the necessary tartness.

Once you learn how to make homemade wine from grapes, you can try to cook it from other fruits. With the right cooking technology, wines made from apples, cherries, currants (only black currant can be used), as well as other berries and fruits, including dried fruits, are very tasty.

In addition, after the first fermentation, you can strangle the wine. This is done with the help of various herbs, dried fruits, as well as fresh berries and fruits.
