Perfectly obtained sauerkraut, the recipe of which means apples and sour berries. She has a very pleasant aftertaste, an appetizing aroma, and looks very attractive. How to cook it? For 5 kg of cabbage, you need at least 100 grams of salt (further to taste), carrots - a half kilogram, apples, preferably antonovki, 300 g (cut into slices), berries (cranberries, can cranberries) - 200-250 g, bay leaf 5- 6 pieces or more, a handful of sweet pepper, you can have a little cluster of cloves. It is worth noting that the ratio of products can be taken at their discretion. The main thing is to put enough salt. To have been properly leavened cabbage, the recipe recommends finely chopping it, somewhat crushed and rubbed with salt, mixed with grated carrots, berries and apples. Then fill it with cans or transfer to a pan, barrel, another container in which the vegetable will reach the condition. Just leave a free place so that there is much room for gases. Therefore, it is more convenient not to use banks yet. In order not to spoil and turn out to be faster than the fermented cabbage, the recipe recommends that the blank be covered with top leaves removed from the heads, then with a linen cloth, a wooden circle or a lid, but a little smaller than a hole in a pot or tub. And from above put a heavy oppression, under the weight of which the vegetables will descend, and the pickle will protrude over them and cover the workpiece completely. Otherwise, the cabbage will rot. Capacity should be held in a warm place for about a week or slightly more (depending on the size of the barrel). Quatred cabbage, the recipe says this, is ready for 8-10 days, when air bubbles stand out on the brine surface. Then you need to pierce the workpiece in a few places with a clean wooden stick, bringing it to the bottom: the way to exit is laid for gases. Periodically repeat the procedure, until the brine is cleaned, becomes transparent. Then you need to wash the leaves on top, the circle-cover, wash the rag (without detergents!), Oppress (or replace with the other, easier), and cabbage itself put in a cool place where it will be stored and used as needed. Only it is necessary to observe the cleanliness of the fabric, lids, etc.

Cabbage, sour with apples and cucumbers

Very tasty sauerkraut is obtained according to the original recipe, which includes, in addition to acidic Antonov apples, also cucumbers. Extra piquancy is given to the dish by hot pepper and dill as a seasoning. Number of products (approximate, vary as desired): cabbage - 3 kg, apples - 1-1,2 kg, red hot pepper - 1-2 pods, cucumbers - 450-500 g, salt - 150-200 g, dill (greens ) taste. Cut cabbage, peel apples from seeds and rub on a coarse grater, cut cucumbers into slices or mugs, and pepper - thin strips. Just do not touch your eyes with your fingers - it will bake even when you wash your hands. Put a layer of cabbage, apples, peppers and cucumbers in the leaven container. After each layer, rinse the salt, distributing it evenly. Cover with dill and, as in the previous recipe, a rag, lid with a load. Pay attention to the juice. Keep in the heat for 14 days, then put in a cool room. Do not forget about the cleanliness of the lid, fabric, and also about how to lay in the layers of vegetables ways for the escape of gases.

Cabbage for early cooking

If you are interested in quick sauerkraut, a recipe with prunes will definitely suit you. Its great advantages are not only taste and unusual preparation, but also very short terms - only 3 days! So, take the main vegetable 5 kg, water - 1 liter, dried plums - half a kilo, sugar - 300 g, natural beet juice (prepare yourself, wiping the vegetable and wringing it) 1 glass, salt - from 75 grams and a little cloves, sweet pepper . Cut cabbage large, you can even put it on quarters, and pour boiling water, and when it cools down, drain it. Prunes to boil. Put the cabbage in the container for the starter, pour out the plum broth along with the berries, add the juice and other ingredients, cover up, put the opium. Keep in the heat for 3 days, then you can eat - snack is obtained is excellent. Store in a cool place.
