Caviar roe - a valuable food product

Fans of this valuable river fish have more than once bought fish, which caught caviar. How can you prepare this delicious and rich in useful substances product? Traditionally, fish caviar is simply fried in vegetable oil, preliminarily having rolled it in flour, without even thinking that it is possible to cook a variety of dishes from it. Pike caviar, salted at home, in no way inferior to the product produced by industrial enterprises. This caviar can be salted in many ways, but one of the most popular is salting it in a strong saline solution for 20 minutes.

One of the main points of preparation is preparation of caviar for pickling. Pike caviar is carefully extracted from the abdomen. The vast majority of people preparing this product at home, wipes (very carefully) it through a sieve, with large holes. Ripe pike caviar is quite easily separated from the films.

Caviar of pike. Preparation:

A saline solution is prepared. Conventional table salt dissolves in hot clean water. The strength of the solution is usually checked with potatoes. So her tuber in a good solution will not sink to the bottom, but will float almost on the surface. The prepared solution is cooled, and then caviar is poured into them. After 20 minutes, the solution is drained off. A bit of sunflower oil is added to the salted caviar. In the refrigerator, such caviar can be stored for up to a month.

Another way that pike roe too often cooks at home:

1. The caviar taken out of the fish is completely filled with cold water. Water should cover it by 1 cm.

2. Caviar is carefully mixed with a fork until all the films are removed.

3. The water merges, and the caviar of the pike is scalded with boiling water.

4. Extra water merges, and caviar is abundantly salted.

5. Add a little lemon juice and vegetable oil to the caviar.

6. The product is thoroughly mixed.

Such a caviar of pike is ready for use already a day after cooking.

Caviar of pike, cooking from which a delicious pate takes only 40 minutes, can be used in a wide variety of dishes. For this wonderful pate, 150 grams of eggs, eggs, ground breadcrumbs, a little lemon juice, 20 g butter, 50 g mashed potatoes, 2 anchovies, chopped dill and parsley will be needed.

The eggs are poured with boiling water and boiled for 10 minutes. Cooked eggs are ground, add to it raw egg, anchovies, lemon juice, salt, pepper. All ingredients are thoroughly mixed until smooth. It is placed in a breadcrumbed, greased form, and it is laid out with mashed potatoes, on top of which are laid out pieces of butter. The dish is baked in the oven for 30 minutes over medium heat.

Grilled caviar of pike can be prepared not only in kind, but also in the form of mouth-watering pancakes. To prepare this dish, you need about 0.5 kg of pike caviar, onions or a bunch of green onions, a third of a small hot pepper (without seeds), 2 chicken eggs, salt (to taste), a pinch of ground pepper, ground thyme, vegetable oil.

It is necessary to chop the onions and hot peppers finely. Together, caviar, onion, pepper, yolks, thyme, ground pepper, salt are mixed.

Proteins are beaten with a whisk until a strong foam is obtained. In this foam carefully, in small portions, the prepared mixture is introduced. All ingredients are gently mixed. A large spoon on the heated frying pan with oil spread the prepared caviar. After a couple of minutes, the fritters are turned over using a spatula. Prepare them under a closed lid.

Serving the dish is as follows: a washed and dried salad leaves are laid out on a portion plate, onto which ready-made pancakes are spread. Decorate the dish with tomatoes and herbs.
