It is not so difficult to cook, for example, bean soup with meat - the recipe provides only one long operation - soaking the beans, and that is, workarounds for solving this problem. The simplest soup with beans

Let's start with the most uncomplicated option. If you do not fast, cook bean soup with meat. The recipe suggests taking 0.5 cups of dry beans or one and a half frozen. Dry beans must be soaked in cold water from the evening, so it will be cooked faster. A small piece of meat grams per 200 is put in a pot of boiling water. Boils - foam is removed, then the meat is cooked for about half an hour, after which the beans are poured from the water. In principle, it is possible to replace dry beans in any recipe with cans - nothing is worse than soup with canned beans (photo below). Only to lay it it is necessary in the last turn.

Bulgarian version

Residents of the Balkans have their own view of the bean soup with meat - the recipe is completely without potatoes, but includes other vegetables. 0.5 kilos of dried beans are again soaked all night. Separately boiled broth from the selected meat. In a thick-bottomed vessel on vegetable oil, grind carrots, a small celery root, three onions and a large sweet pepper are fried. As a blush, a couple of tablespoons of tomato paste is added, and the roast is stewed in it for about five minutes. Then it is added beans, from which the water is drained, and the vegetables are stewed by the whole company for about forty minutes, covered with a lid. When the beans soften a little, broth is poured in, garlic is pawned (five pieces, or whole, or cut by plates), laurel and a full spoon of peppermint. Cooking continues on low heat until the beans are completely ready. It will remain generous to season the soup with peppers - both red and black - with salt and herbs. Carry on the table hot.

Soup with canned beans

Not everyone likes to soak and long to cook dry beans. And in boiled form they are sometimes hard, especially if they differ in size. For this case, there is an alternative: you can make soup with canned beans. For him, broth is made from meat on bone; When it is ready, the pork (or beef) is removed, removed from the bone, cut and laid back. Simultaneously, pots of potatoes are thrown into the pan, and carrots and onions are cooked in parallel. When she gets the right color, the beans are added to the pan in tomato and stewed together for two to three minutes. Grams 800 broccoli inflorescences poured into the pot at the half-ready stage of potatoes, and after ten minutes the frying poured. Salt and spices are added, and after three minutes the fire is quenched, and the soup is left on the stove for infusion.

White beans for soup

Two glasses of beans, standing a night in the water, are poured into the water; When it boils, the same place put the meat on the bone. After boiling and removing the foam, a bulb is placed in the broth, into which two carnations are stuck. After an hour, the onion is discarded, and the bone is removed to remove the meat. During this time, a roast must be made from two small carrots, onions and a stalk of celery. Soften - poured a spoonful of red hot or sweet pepper. In a pan, four potatoes are laid with small pieces, frying, sliced meat and 200 grams of cabbage, crumbled with squares. Collected "in a bunch" of soup of white beans cooked about a quarter of an hour, served hot immediately. And - it is desirable - sprinkled with fresh herbs.

Red bean soup with toasted sausages

I must say that this type of beans is brewed somewhat longer than white. Therefore, to speed up the process, you can go to the trick: a partial glass of beans pour a liter of water, cook a couple of minutes, throw in a colander, rinse with cold water from the tap, pour two and a half liters of fresh water and put it on the fire again. After boiling, the beans will be ready in 20 minutes. From this moment, and begins to cook soup with red beans. The recipe requires a tomato roast. That is, after cooking the usual, from a large carrot and two onions of medium size, two tomato cubes are added to the frying pan (do not remove the skin) and three cloves of garlic, cut into slices. Extinguish vegetables will be about ten minutes. When the time allotted for the bean passes, 4 blocks of potatoes are poured in; After 10 minutes, the roast is added, and after the next boiling - the circles of four sausages, pre-fried in lean oil. As soon as the soup boils again, it is covered with a lid, removed from the fire and insisted for a quarter of an hour.

Mushroom soup with beans

If you are not too satisfied with the traditional bean soup with meat, the recipe can be supplemented with mushrooms that are perfectly compatible with the main ingredient. The beginning of cooking is already familiar: the beans are soaked overnight (there is enough glass for a two-liter pot). When the beans reach half the preparedness, a chicken (or its "spares", intended for broth) is put in the pot. Simultaneously, in cream and vegetable oil (half-and-half) until brown, fries are fried, about 200 g. A roast is made separately from one carrot and one onion. To the ready-made bean, cubes of two potatoes are added, and after ten minutes - mushrooms and roast. Before turning off the dish is salted and sprinkled with herbs.

Quick Soup in a Multivariate

What is good about this device is that it eliminates unnecessary movements during cooking. In order to cook soup with beans in a multivarquet, you do not need to prepare anything separately: one and a half cups of soaked white beans, five cut potatoes, a crumbled onion and carrot are added to the bowl, two tablespoons lean oil and two tablespoons of water are poured into the bowl. Depending on the model of the unit, either the "Quenching" or "Soup" mode is selected, the timer is put on the hour - that's all! Before serving, it will be necessary to season with spices, salt and greens, and no more worries. The only clarification: if you have red beans or a soup with meat, cook time should be increased to one and a half to two hours.
