'Aranchini' - delicious Italian rice balls

In this article, we will describe how to prepare delicious rice balls "Aranchini", because appetizers in Italy have a special role, they seem to start a meal. Varieties of appetizers mass, they are all good in their own way and easily assimilated due to the abundance of greenery and olive oil.

The correct preparation of snacks is an important criterion of culinary skill. This recipe for 4 servings, we will need the following products:

- a glass of rice "Risotto";

- one hundred gram of wheat flour;

- three eggs;

- one hundred grams of diced Mozzarella cheese;

- vegetable oil for deep-frying not less than 500 gr .;

- coriander;

- parsley;

- two cloves of extruded garlic;

- half a cup of crushed biscuits;

Stuffed "Aranchini" (rice balls)

On 10 pieces it is necessary:

- ground beef 100 gr .;

- turkey breast 100 g;

- rice "Arborio" or "Vialone" 200 g;

- Parmesan cheese 50 gr .;

- tomato paste 10 g;

- green pea;

- two eggs;

- a glass of meat broth;

- a tablespoon of butter;

- celery, basil, parsley;

- onion;

- bread crumbs 50 gr .;

- a tablespoon of olive oil;

- a pinch of chili, saffron, black pepper, salt;

- flour 10 gr.

1. For the filling: cut the onion, a part of parsley, dill, coriander, celery and ½ turkey breast.

2. Fry onion in olive and cream butter. To him put minced meat, turkey, parsley and celery. Pepper, salt, put chili, tomato paste, broth, stuffing (see point number 1) and green peas - all to extinguish 15 minutes.

3. Boil rice until half cooked, add the soaked saffron, grated cheese and butter - stir, cool and mix to the egg mass.

4. Chop the basil and the remaining greens to add to the filling.

5. One egg whisk, pepper and salt. Rice is divided into 10 balls, put meat stuffing in the middle of each, deepen the zalipit and stuffed balls roll in flour, egg and breadcrumbs.

7. Donut fry in oil until brown. Serve with herbs and fresh vegetables.
