An interesting Uzbek dish is khanum. Recipe
We suggest you to try to cook khanum. A recipe with a photo of this dish is provided. Ingredients include the following ingredients:
- Water - 1.5 cups;
- Flour - 0,5 kg;
- Chicken eggs - 1 piece;
- Meat (preferably lamb) - 0,5-0,7 kg;
- Onion - 2-3 pcs .;
- Carrots (medium size) - 1 piece;
- Greens, salt, pepper.
First we need to knead the dough for two rolls: take flour, water, 1/2 teaspoon salt, also vegetable oil, a tablespoon and one egg, let it lie for about twenty minutes. For this time we will make a stuffing, otherwise it will not be khanum. The recipe includes meat, so you need to prepare it first. In case you do not use minced meat, but meat, then it must be passed through a meat grinder. There we put sliced onions, mashed carrots, add black pepper ground and, of course, salt, mix well. Now take our dough and roll it thin. For those who prepared mantas earlier, the fact that both manti and khanum recipe are similar, and the dough rolls out equally thinly, will serve as a clue.
Now it's time to lay out our minced meat, mixed with vegetables and spices, on the dough. Fold the dough into a roll, carefully tear the edges (the juice should not leak out). Now put the khanum in the steamer. The recipe for roulade, as you can see, is not at all complicated. If necessary, grate steamers can be oiled. We bake the roll forty-five minutes. In case there is no steamer, you can use pots: large and small, constructing something like a water bath. In the lower large saucepan, you need to boil water, put a small one in it, lubricate it with oil and put khanum in it. The recipe does not change. The roll is also prepared forty-five minutes with a tightly closed lid, and we patiently wait for them to expire.
After this we take the ready roll, we serve it to the table on the platter. Sprinkle with herbs (parsley, dill), we serve some sauce. The most suitable option - crushed garlic, sour cream, greens, salt.
- Potatoes - about 1 kg;
- Onion - 0,8 kg;
- Flour - 0,7 kg;
- Eggs of chicken - 2 pieces;
- Water 0,2 l;
- Sunflower oil, black pepper, salt;
- Tomato paste.
First we knead the dough: mix the eggs, water, oil and salt. Gradually add flour, mnem weight until we get an elastic dough. Now we need to let him stay - wrapped in a food film, put it aside.
Now proceed to the filling. We clean potatoes, we cut it in a combine or on a grater. The same fate awaits and the onion, only we crush it manually, with a knife on the ditch, to make beautiful semi-rings, half of which we will fry in a frying pan.
While our khanum is getting ready, we'll make a sauce for him, because it's more delicious. For this we need the rest of the onion, two spoons of tomato paste, water, salt, pepper. Now the most interesting: we cut the roll into pieces, lay out layers, each of which is lubricated with gravy. Sprinkle on top with herbs and serve.
