This is one of the most important stages of wine production. At a temperature of 12-16 degrees, the prepared mixture is placed in oak barrels for 2-3 years (depending on the type of beverage). It is here that the future wine acquires its main taste characteristics. A large staff of specialists constantly monitors compliance with technological regimes, trying to conduct the production process in accordance with world standards and standards. Since 1980, the company operates a research laboratory that develops new types of products. Production is developing, and since 2000 about 45 different wines are produced under the new trademark "Inkerman".

The enterprise grows from year to year and gradually enters the world market. In recent years, its geography has changed significantly. Crimean wine "Inkerman" is supplied not only to various cities of Ukraine, but also to Russia, Germany, Poland.
