We offer you recipes for cooking sterlet. Here, for example, sterlet baked in sea salt. The following components will be needed:

* Sterlet 2 kg
* Sea salt is a large 3.5 kg
* Sea salt fine 1 kg
Mustard (seeds) 100 gr
* Olive oil 1 tablespoon
* White pepper ground, salt

Before you prepare the sterlet, you need to defrost it, remove the gills, insides and clean, and then rinse, remove the dorsal fin and the vizier, catching it with a fork near the tail. The fish are dried with a towel and rubbed from inside with salt and white pepper. In the cup, pour in sea salt, mustard and pour a glass of water. The mixture is spread on a baking tray and the fish are placed on it with the belly down.

Olive oil should be smeared on the back of the fish and sides, and then, lightly pressing his hands, sprinkle the sterlet with the remaining mixture. A bowl with fish is put in an oven preheated to two hundred degrees and baked.

Preparation of sterlet in the oven will take about half an hour. The ready fish is removed from the oven and skin is removed. If the salt is sintered, then the crust formed should be broken, knocking on it with a hammer. Before serving, the sterlet is decorated with greens and cherry tomatoes.

The fish can be baked in the oven in parchment paper - it will not let the juice flow out, and the fish will turn out juicy and very appetizing. This recipe for cooking sterlet is very simple. You need to take the fish, pepper it and put it on a sheet of parchment. On top you need to put basil or parsley and a few peas of sweet pepper. After this, the fish is wrapped and put in a preheated to 180 degree oven. After 45 minutes, the preparation of sterlet in the oven is complete and the fish can be served on the table, pouring it over the lemon juice. You can decorate it with slices of lemon.

Recipes for cooking sterlet on the grill are also not complicated. Here's one of them.

* Fish 1 kg
* Butter 100 g
*Breadcrumbs
* Lemon 1 piece
* Mayonnaise or tomato sauce 250 gr
*Salt pepper

Having divided the fish into portions, you need to remove the moisture from the napkin, rub it with salt and pepper on all sides, grease with oil and roll in breadcrumbs. Fish can be fried both in portions and whole carcasses. To do this, the fish need to remove the fins and spread out, not separating the halves from each other. After that, the sterlet should be dried with a napkin, salt and pepper, sprinkle with oil and roll in breadcrumbs, and then put it on a grate and put it in a heated frying cupboard. Serve ready fish with fried potatoes, decorated with lemon slices.

There are, of course, very complex recipes for cooking sterlet, for example, fry vegetables and stuff them with fish, alternating with layers of cheese and shrimp, or prepare a sterlet with champagne sauce. But still there is nothing better than a grill or coals, and for this gutted fish it is enough to sprinkle with lemon juice, season with spices and salt to taste.
