Tasty dishes have always been an element of a holiday, but in everyday life we also strive to prepare something nutritious and original. However, for the most part, such treats have a very high energy value. They are contraindicated to people with excess weight, so more and more interest awakens to such a dietary option as dietary soup. This article describes how to prepare a dietary soup from pumpkin and quail eggs.

Ingredients for soup preparation:

- Pumpkin sweet variety, mature, young - 600 grams;

-milk cow fat-free - 1 liter;

- greens of dill - 100 grams;

- a bunch of parsley - 100 grams;

- sorrel fresh - 100 grams;

- Bulgarian pepper (paprika) - 150 grams;

- quail egg - 6 pieces;

- the tomato is ripe, large - 1 piece.

Wash the pumpkin, and then gently remove the young peel and seeds with a sharp knife. The flesh must be cut into large pieces about the size of 5x5x5 centimeters.

Wash greens thoroughly in running cold water, and then additionally soak it in a separate cup. Before you prepare a diet soup, all the products should not only be washed, but also render harmless. Soaking will remove harmful nitrates from plants and make the dish much more useful and tasty.

Pepper is also washed, cut into two pieces and taken out all the seeds and core. Cut the vegetable into long, but thin strips, salt with sea salt and leave aside to extract the juice.

Eggs quail hard boiled, then quickly dip into ice water and gently remove the shell. They will be an excellent addition to the dish. They can be put directly before serving in a diet soup.

Pumpkin put into a deep saucepan and pour with filtered water. Bring vegetables to boil and keep on fire for at least 15 minutes. Add the broth in a separate cup. Finished pieces of pumpkin put in a blender and turned into a homogeneous puree.

Pumpkin puree pour broth and milk and put again on the fire. In the dietary soup, add the pepper along with the juice.

The soaked greenery is partially torn into small pieces, partially rubbed in a mortar and added to the diet soup two minutes before the end of cooking.

Cover the pan tightly with a lid, cover with a warm blanket and leave for half an hour to insist. Serve soup better in small soup plates, decorating the dish with two halves of quail eggs.

Pumpkin soup is tender and to taste very similar to mashed potatoes, but has a low calorie content. Due to the fact that the dish has a creamy consistency, when used, a person does not feel hunger for a long time. Soup can be eaten for breakfast and dinner. It contains many different vitamins and helps to reduce body weight. Fiber, which is the main element of vegetables, stimulates the cleansing of the intestines and normalizes peristalsis and digestion. Quail egg is a full-fledged source of microelements and, of course, protein. In pumpkin cream soup, you can add celery, a little garlic, as well as basil leaves. This dish is appropriate to include in the children's menu, as well as use as a first meal in a comprehensive dinner.
