Caloric content of boiled pink salmon is practically the same as fried or smoked. But if you are planning to disassemble it into pieces for salting, you will not need a head.

Choose fish carefully. Despite the fact that the pink salmon, the calorie content of which is not that high, inexpensive fish, nevertheless, it will be very insulting if you spend time and energy preparing it, before you serve it you will notice that it, for example, is bitter. This happens, as a rule, either with the old fish, or with the one that was stored in violation of the freezing regime. Unfortunately, unscrupulous sellers often add it to high-grade fish. So when buying carefully look at your future purchase.

First of all, you should look into the belly of pink salmon. It must necessarily be pink, but in no case yellowish. If you buy nepotroshenuyu or frozen fish and do not have the opportunity to look inside - examine her head, tail and body as a whole. The "winded" tail indicates that the fish was subject to preliminary thawing.

When buying fish, pay attention to its gills. If they have a greenish color or are covered with mucus - therefore, the fish is stale and should not be bought. The presence of cloudy eyes in this case can not be considered an indicator, since all frozen fish are cloudy.
