Marzipan. The recipe is classic and simple

In the fairy tales of famous German writers, marzipan, an amazing sweet treat, which all children dream of, and which often symbolizes a childhood dream, is very often mentioned. Probably therefore, in the very sound of the word "marzipan", something magical, mysterious, leading to the mysterious world of childhood is heard. In fact, marzipan, a recipe for cooking which can be found in old culinary books, is just a dense mass of a mixture of thin ground almonds and powdered sugar with a small amount of water, from which candies were made, decorations for cakes, Christmas cakes and cookies.

Currently, sweets from marzipan are famous for Germany. Without this sweet treat, not a single children's holiday and a Christmas market can not do. How to make marzipan? The classic recipe consists exclusively of ground almonds, the oil content of which allows achieving the best elasticity and stickiness of the mass, as well as powdered sugar and a small amount of water.

Marzipan. The recipe is classic for home cooking

A polylogram of sweet nuclei and a few kernels of bitter almonds should be peeled off, and for this, it is scalded with boiling water. Peeled almonds are dried in a frying pan (can be in the oven) on a small fire, making sure that it does not darken and burnt. Then kernels of nuts need to be ground in a blender in a powder. 150 grams of powdered sugar must be sifted and mixed well with nut powder. In the sugar and nut mixture from the atomizer, add one spoonful of boiled water, continuously mixing the mixture so that it is evenly moistened. After that, the marzipan wet mixture is passed through the meat grinder four to five times and placed in a saucepan over a slow fire, stirring and gradually adding another 50 grams of powdered sugar. The finished marzipan should be homogeneous, elastic and sufficiently sticky. From it form various figures for decorating cakes or simply treats for children.

There are other recipes for preparing this dainty, for example, without heat treatment. How to cook marzipan in another way? To improve the stickiness in the nut mixture, add egg white.

Marzipan. Cooking recipe with whipped whites

250 grams of almonds, ground into powder and 250 grams of powdered sugar are well mixed in a bowl and add a small spoonful of lemon juice and whipped egg whites into thick foam. The mixture is first mixed in a mixer and then by hand until it becomes even and plastic so that it can be easily rolled out into a thin layer or formed of various figured products from it.

If desired, the marzipan mass is colored in different colors with the help of food colorings. Marzipan figurines can be dipped in chocolate glaze made of white or dark chocolate, and you can roll the mass into a thin layer and cover the surface of the pie or cake instead of the glaze. From a thin stratum cut out various figurative figures in the form of a Christmas tree, leaves, flower petals and lay out on a surface of a cake. The marzipan mass, like clay, can be easily molded from it, so you can also add children to this activity.

In addition, the marzipan layer is used before covering the cake with an aysing or royal glaze. If you simply apply a layer of glaze on the cake, it dampens and loses its decorative properties. Therefore, before you cover it with a cake, a fine-marbled marzipan is placed on the cake, a recipe for the preparation of which is better to use the classic, without proteins.

Ready marzipan should be stored in foil or film in the refrigerator. It retains its nutritional and taste characteristics long enough.
