"Oloroso" ("fragrant") is another type of sherry. While the strength of the wine does not reach 18%, it is aged under the film. Because of the oxidation, the wine turns dark amber, and to taste it is like a combination of walnut and sweet caramel. In "Oloroso" glycine is formed and it is slightly oily in consistency. The first drink is a dark shade with a more delicate and pleasant taste, the second has a slightly intense color, and its minimum strength is 18%.

All the best qualities of the two previous species absorbed the sherry "Amontillado". The process of maturation lasts about 5 years exclusively under the mold.
