How to cook roast from cod in a variety of ways?

First, let's define in terms. According to Russian ideas, the roast is meat (in our case fish) fried with potatoes (or afterwards stew with it). But initially this word meant simply fried meat, without any vegetables. And to fry it was supposed in such a way that the maximum quantity of juices did not flow to the pan, but remained in the meat itself. And this does not mean that the hunk was served half-baked - there should not be any blood in it, only juice.

In this article, we will describe several ways in which you can cook roast from cod. First of all, let us consider the fish interpretation of the primary understanding of the term. But the subsequent recipes will be devoted to its traditional incarnation.

Only fish!

To cook a classic roast of cod, you only need it, lean oil, salt and flour. The fish is cleaned and disemboweled (or the fillets are already cut), cut into pieces and crumbled in flour. Do not salt! The main principle of any roast - salting at the very end, so that the processed meat does not let the juice. Frying cod on the frying pan in oil frying pan, about ten minutes on each side. Time, however, will have to be determined "by eye", since it strongly depends on the size of the pieces. To eat it is necessary at once (it is incorporated in the name), but also in a cold kind roast from a cod and tasty, and appetizing. We turn to the recipes that embody our idea of what is roast (from cod or traditional meat). Since we are dealing with fish, the recipe has its own nuances. So, before the obligatory roasting gutted and chipped cod will have to boil for three minutes. After that, the carcass is removed from the carcass, and the meat is cut rather large. In a saucepan, cream and olive oil are heated (the vegetable should be one third larger). In this mixture, garlic is fried - a pair of denticles, and very quickly. Next, cubes of two large potatoes and a root of celery are introduced (at the rate of 800 grams of cod). After a couple of minutes, cod and suitable greens are laid out in a saucepan, and two more cups of milk pour out, salt is added and favorite spices (combined with fish - this is important), and the dish is stewed for about twenty minutes with medium heat. Then eat on health.

It also embodies our ideas about the correct form of such a dish. It's just not cooked in a frying pan, but in the oven. Generally, recipes from cod in the oven are much more diverse than suggesting non-spirited cooking. This is one of them. Take a kilo of washed cod fillets and dried - at least with napkins. Served portioned, seasoned with salt and pepper. From two chopped onions and two grated carrots, a roast is made. Eight cartouches are cleaned and cut in circles - very thin, like chips. Further on the greased baking sheet lay layers: the first - from potato kruglyashy, the second - from fish pieces, the third - from the frying. The top is filled with mayonnaise (a tube will run, about 200 ml), and the sheet is put on for half an hour in the oven. When the roast from the cod is ready, it is sprinkled with a chopped onion and dill.

Another way of cooking, which can please us with recipes from cod in the oven. The result is not only juicy, but also crunchy. It's no secret that crunching attracts a very large number of eaters - otherwise the chips manufacturers would have been ruined. The recipe, in principle, is also a variation on the topic "roast cod". Fish is taken three quarters of a kilogram (we omit the details of evisceration). Cut into portions, it is peppered and salted. A pair of bulbs, dotted with rings, is added in the oil until golden. The circles of 4 potatoes are separately flushed. In the pan without a handle (or in the form) is placed onion roast, the next layer - sprinkled with the flour of cod, then - potatoes. A kind of "pie" is poured with melted butter and put in an oven. During this time, the filling is made up: one and a half cups of sour cream are mixed with cut dill. 25 minutes after placing the baking sheet in the oven, roast cod is poured over with sour cream sauce and returns to the place at the same time.

Also very tempting recipe. Again, the fish is cut, breaded in flour mixed with salt, and put on the burning oil in a frying pan. On top of each piece is attached a bow circle, not disassembled on the rings. Fry from below - turn over, sprinkle with grated carrots and put the container in the oven. After about ten minutes, the slightly baked fish is poured with a salted and sour mixture of mayonnaise and sour cream (in pleasant proportions to you personally), is covered with potato slices and is put away. When the tubers blush - it's time to call the family to the table.
